Found 2 Nutrition Seminar cookbooks from 1982 at a garage sale for 10¢ each. I am finding things I never heard of... such as Cooking with SEF.... using 1 package SEF. Anyone know what this is? A few of the other ingredients I found out what they were but this I cannot find. Thanks.

Could that be "SAF"? Which would be SAF-Instant yeast.

Did you look for an index or glossary of words in the book?

Actually it was a sheet included in the book "Cooking with SEF". I think it may be some kind of pudding since one of the recipes is 1 envelope SEF, mix with chocolate extract and freeze.... tastes like fudgesicles. Other recipes use it with fruit and nuts.

Now that rings a bell. I remember an "off" brand of pudding mix from back then that wasn't available for very long. Are you wanting a recipe for making fudgesicles? I make them with Magic Mix (a homemade mix that can be used to make all kinds of things - Cream of _______ Soup, white sauce, gravy, pudding, Alfredo Sauce). One of my homemade "convenience" foods.

I just actually wanted to know what SEF was but after looking at the recipes further figured it was some kind of pudding. I would love a MAGIC MIX and ideas of different foods to make. I did make pineapple and kiwi popsicles last week that were very good. Just blended a pineapple with 6 kiwis and about a T of honey.

Magic Mix is a recipe developed by the Utah State Extension Service. You will find several variants of it when you look on-line, and I make it with cornstarch, instead of all-purpose flour, to keep it gluten-free. There is another gluten-free version made with gluten-free all-purpose flour (see recipe #3 link below. I also use coconut oil instead of butter in the recipe, which makes it shelf-stable, while recipes made with butter need to be stored in the refrigerator or freezer. You can also make it with powdered butter (see recipe #2 link below). This has been a great pantry convenience food, especially when I went gluten-free.

Fudgesicles
1/2 cup sugar
1 cup Magic Mix
2-3 Tablespoons cocoa
2 cups water
1 teaspoon vanilla
1/2 cup milk (optional)

Combine Magic Mix, sugar & cocoa in a saucepan and mix well. Add water, stir over med. heat until pudding bubbles. Add vanilla and mix. Add milk and stir. Pour into Popsicle molds or into paper cups. Cover paper cups with saran wrap and poke a spoon through the saran wrap into the fudgesicle for a handle. Place in freezer until frozen solid.

I sure remember Magic Mix it was pushed a lot in the late 70's in all the extension classes and 4-H classes I took.
