What are your favorite fillings for lettuce wraps?
Also, I'd like to learn to make some good dipping sauces. Do you have a favorite?
1) Ground chicken sauteed with onion, garlic, soy sauce, hoisin sauce, ginger, vinegar and chili sauce and mixed with chopped almonds
2) Chicken fajita with peppers and onions
3) cabbage, carrots, water chestnuts, roasted chicken and peanuts in a ginger-hoisin-vinegar marinade

The dipping sauce I use for things like this is here. You can use soy sauce/tamari in place of the coconut aminos, and vary the ratio of fruit:nut butter.
I make dipping sauces from sweetened sambal oelek and rice vinegar; peanut butter, coconut milk, sweetener, and garlic (dash of chili optional); tamari, rice vinegar, and chopped scallions; rice vinegar and sesame oil; sambal oelek and ketchup...
For wraps, any taco filling with mole and guacamole dipping sauces; mini turkey meatballs with parsley, garlic, and chili seeds, and a dipping sauce made from cooked whole cranberries.

The Cheesecake Factory has summer rolls which are great. For the wrapping just substitute lettuce:
Delicate Rice Paper Rolled Around Asparagus, Shiitake Mushrooms, Carrots, Rice Noodles, Green Onion, Cilantro and Shrimp – Served Chilled.
Delicious, and they do serve it with two different types of dips, one is more of a soy sauce but with added ingredients, the other I believe but not sure is a peanut sauce.
We had egg salad lettuce wraps for lunch today. Delicious!
As a result of this thread, I actually made lettuce (romaine) wraps with tuna. I didn't believe that I would be satisfied with that (still missing my bread, even after more than a year) but I was WRONG! It worked really well. I will do it again.
