We haven't had a "what's for supper" thread in awhile, and it occurred to me that many of y'all are probably eating what we are this time of year: lots of fresh produce! So chime in with your menus and ideas. Gardeners, CSA-er's, farmers market-er's - it's that time of year to gorge on freshness. How are you eating/coping with all the freshness? I can always use more/new ideas for using what's on hand.

I've found myself these last few weeks not really planning my weekly menus like I usually do - we seem to do better this time of year just "going with the flow" in terms of what fresh produce comes our way. Day before yesterday my truck driver at work showed up with his first home-grown cantaloupe of the season, he knew I'd buy 3 or 4, so I made a meatloaf and we've gorged ourselves for 2 days on meatloaf and cantaloupe. The cantaloupe was OMG sweet and delicious. And fresh.

Tonight's supper: the last of the meatloaf, and the last of the KFC chicken (DH simply cannot come home from his out-of-town doctor's appt. without buying either KFC or Long John Silvers - I don't approve, but can't deny the stuff is pretty tasty). Having with 2 skillets of fried okra, picked this morning by me in the garden, again OMG this stuff is good. I swear you can SMELL the fresh, along with how good it tastes. And 2 garden tomatoes, sliced and chilled. Very simple, and very good.

Tomorrow night's plan: tacos (taco shells are on sale in the sale ad) with homemade pico de gallo. I already cut up the (garden) tomatoes, in the morning will add the garden onions and peppers and basil, and the store-bought other ingredients. (I'm not to the point of ALL fresh ingredients yet.....but it's a start!)

We belong to a CSA and get a delivery every 3 weeks. I am thinking of upping that to every other week since I have more time to cook since the beginning of July (work was crazy February through June). Sadly, there wasn't time or resources to put in a garden this year, although now I am glad since we are all set for a drought summer and we have no business using that much water for a garden. We do have a few herbs in pots though.

Anyway, last Wednesday's delivery was blueberries, yellow cherry tomatoes, 2 huge I don't know what variety of heirloom tomatoes, red skinned potatoes, broccoli, red onions, yellow crookneck squash, and peaches.

Saturday I made potato (CSA) flatbread with fresh thyme (garden) and parmesan to take to a friend's for lunch. Dinner was fresh corn and black bean salad with avocado, red onion (CSA), cherry tomatoes (CSA), and squash (CSA) with flatbread

Sunday's breakfast was pancakes with blueberries (CSA). Sunday's dinner was zucchini (someone gave us one) and fresh corn fritters with yogurt dill sauce, with roast chicken (leftover from the week), green salad (lettuce and cucumber my mom had given us; CSA red onion), and left over flatbread.

Last night's dinner was leftover fritters, plus a tomato (CSA) salad with basil (garden), fresh mozzarella, olive oil, and balsamic vinegar.

Tonight I am working late so dinner will be bean burritos probably (always have beans on hand). There is still some tomato salad and green salad to eat.

That leaves the peaches, which we are just eating plain, and the broccoli and the rest of the squash will get eaten this week, probably in a stir fry.

Sounds great Kara and black dog! You sure really making use of what you have. :). We are thinking of joining an organic CSA I guess if we are going to do it we better get busy now before summer is over!
