View Full Version : Coconut Milk Ice Cream

DH and I have an ice cream maker and I'd like to try coconut milk ice cream.

I have found several recipes online but am never sure if I should be getting the coconut milk in a can, like in the Asian section of the grocery store (ew, I hate things like "Asian section" or "Hispanic section") or if I can use the coconut milk in the Tetra paks.

Anyone have experience or know the answer? Thank you thank you foodie friends :)

I will put a little happy cow to wave her thanks for this non-dairy ice cream.

Haven't tried this type of ice cream with coconut milk yet, but the silk brand of soy milk also sells coconut milk.

Most of the recipes I've seen say to use the can. I made some ice cream with almond milk today and it had more of an icy texture, but it worked. The coconut milk in the 1/2 gallon refrigerated containers has more fat than almond milk, so it might work. Always worth a try -- it will be tasty even if the texture is not precisely what you expect.

i'd be inclined to mix the canned stuff with the carton stuff, then add coconut oil and coconut rum. The rum will keep the ice cream from freezing rock-hard along with adding another layer of flavor.

Is this like the coconut icecream that a lot of Thai restaurants serve in 1/2 coconut shells? Love that stuff.
