Let's make a list of 100 ten minute summer recipes.

1) BLT with fresh garden tomato, especially with slices so big and juicy they hang off the sides of the bread.

2) Pasta with fresh tomato sauce. Start water boiling. Use a pasta shape that cooks in about 6-7 minutes.
Sautee onions, peppers, diced tomatoes. Season with salt and pepper to make a fresh sauce.

I just made a salad of 2 diced fresh tomatoes, 1/2 English cucumbers, 1 large red peppers and 1 1/2 cups of chick peas sprinkled with a sundried tomata dressing. On the side, I added 85gm of diced imitation crab with a dipping sauce made from horseradish and ketchup. For dessert, we each had 15 jumbo cherries.

One could add various cheeses to the salad for a variety.

Most of my summer cooking follows one of these options:
a) take the vegetables and fruits out of the fridge. Make a salad. Top with leftover chicken, fish, beans, roasted tofu, or some cheese.
b) take the vegetables out of the fridge, chop, and grill alongside chicken, fish, or chicken sausages.

"Crabmeat" Salad: a pack of imitation crabmeat tossed with garden cucumber slices (alas, I have none) and chopped red onion, dressed with favorite ranch-style dressing. Served with store-bought flavored crackers, or croutons on top (for crunch).

We're grooving on the "grill dinners" lately:
Start the grill while you throw together some quick vinaigrette
Throw something on the grill: chicken sausage, chicken breast, chunk of fish, whatever.
Throw some mini-peppers on the grill to char a little.
Cut a romaine lettuce heart in half lengthwise, brush with olive oil. Grill it for about 3 minutes.

Wing it all on two plates, drizzle the romaine with vinaigrette, crumble some goat cheese on it, maybe some chopped walnuts and/or dried cranberries.

we love BLTs too!! super quick and easy.

1. grilled chicken over salad
2. egg salad and bacon sandwiches on rye
3. macaroni with tuna, celery, carrots & mayo


** I like to cook pasta ahead of time in big batched and then I can just pull out of the freezer drop in boiling water and it's done in 5 second and taste just as good as the 1st time it was cooked!
