I've been getting such wonderful suggestions for salad dressings that I thought it would be neat to designate August the Salad Month and see what kind of salads people are eating - especially homemade ones!

Today I had a cobb salad. Not homemade unfortunately. I'm looking forward to making some of my own creations next week.

How about you? Did you have a salad today? :)

My MIL had a heavy Swiss accent and I though I heard her say a few times that we were having "cobb salad" for dinner but instead she was saying "cauff salade" which is I think head lettuce.

Last week, we got some really great tomatoes and a cucumber in our CSA box. I cut them into fairly large chunks, tossed with olive oil, white balsamic vinegar, chopped basil (we have some in our garden), salt and pepper. I let that sit for a bit to marinate, and then served that over fresh spinach with a sprinkle of crumbled feta.

DH is working a lot this week and I am sick of sandwiches, so I had a salad for lunch and a salad for dinner. I'm afraid I'm not too creative, but here it is:
Lunch: romaine, tomato, black olives, Annie's honey mustard dressing
Dinner: romaine, tomato, black olives, cucumber, sunflower seeds, tiny pink shrimp, olive oil & red wine vinegar
A lot of things disagree with me, so I keep it somewhat boring deliberately. I've already made tomorrow's lunch salad, and it is the same as today's with a few rounds of goat cheese on top.

My dinner was a salad of mixed greens, sauteed zucchini, peas, pepitas, and blueberries with some coconut aminos.

I recently completed a 2 Week Raw Food Challenge, in which participants ate a minimum of 75% Raw Food by weight for a period of 14 days. During this time, and since, I've eaten many delicious salads. Most have involved baby spinach, arugula, baby collards, romaine lettuce, carrots, onions, cucumbers, bell peppers and spiralized veggies. I made some raw sauerkraut recently and included that and some of my raw dehydrated flax seed crackers in salads, too.

I have made spiralized raw "spaghetti" noodles from zucchini with squash and raw marinara, pesto and arrabbiata sauces, which are essentially salads blended in my Vitamix. I've made spiralized cucumber and carrot "noodles", which emulate rice noodles in recipes, such as Vietnamese rice noodle salad, which I made 2 days ago.

Salad of the Day here was sliced cucumbers with a little minced garlic and onions and a couple of handfuls of purslane, in a dressing of sour cream thinned with half-and-half (maybe not optimal nutritionally, but frugal in that both had to be used up) and some salt and pepper. Cool (literally!) variation on the familiar cucumber salad recipe.

Salad for the last two days has been:- pear,carrot,beetroot,melon,olives topped with cottage cheese. I do not like cucumber, although I do like gerkins, and find (for some silly reason I think,) lettuce difficult to digest but I have discovered that young dandilion leaves are just fine.

As an aside DH's late aunt eat mostly raw food all her life and lived to 93!

Love salads so nice thread.
Having fresh shredded cabbageand carrots from our garden with a dressing made from low-fat mayo and homemade pickle juice and a cold meat sandwich with grapes for lunch.
Just finisned cooking the pasta for tonight's tuna/clelry salad served with a mix of diced cukes, tomatoes and red peppers drizzled with sundried tomato dressing with cherries for the sweet.

I'm enjoying reading about everyone's salads! Today I'm making a salad of romaine, grilled chicken, bacon, a bit of blue cheese, and some tomato. The chicken is highly spiced and I'm going to try to go without any dressing. I think the strong flavors might be enough on their own, and the tomato provides some moisture and a bit of acidity. Oh, I better put in some avocado! Thanks Jane!

Lately, I've been having BLT salads with homemade bacon dressing (mayo, ketchup, bacon drippings), lots of tomato, crumbled bacon, and Walla Wallas over romaine.
