View Full Version : Red water after blanching beans......??

I've asked this on another forum, but thought I'd ask it here too.
Today I blanched some Roma and Blue Lake pole beans before freezing them.
When I went back later to dump the pot of water, it was red! Neither of the beans have brown/red seeds.
I've been doing this for years and have never had red water afterwards, although it is my first year to do the Roma pole beans.

Here's a pic of the water. Very strange!

I have no answers for you, CathyA, and I even asked my mom, too, and even she said that she's had no experience with such.

Here (http://www.curiouscook.com/site/2012/07/peeling-fresh-fava-beans.html) is an article I found that touches on the topic.

I'm thinking (possibly), due to natural cycles, there may be growing seasons that produce a more acute chemical in the beans leading to the wine-coloured water.

My first thought was "iron." But that is strange; I've never seen that.
