View Full Version : Want a coconut milk ice cream recipe
I have a restricted diet. I really like coconut and think there must be a good recipe to make a healthy coconut ice cream. Any ideas?
I don't eat dairy, so I have bought coconut "ice cream", and it's really good. But I don't have it very often because "ice cream" is one of my weaknesses and I'd eat the whole container by myself. Also almond, and rice. I'd never make it myself tho because of my "weakness". Good luck, tho!

OH, tell us what your restrictions are and we can help! I have a lovely soup that uses coconut milk, if you want. Is it a dairy restriction? What about eggs? Corn? Gluten? Soy?
Peggy, the coconut milk soup sounds great! I'm not cozynana, but ... I don't eat dairy, eggs, corn, wheat/gluten, or soy. I can have goats milk, and egg yolks. Actually, I can eat any of those things in small quantities, just not very often, because I have no obvious reactions -- and yes, I have been tested. Also no sugar -- we use stevia and/or xylitol, depending on what we're using it for. I've lost 100+ pounds now, over five/six years.
(I do have a year-round runny nose, but that's cats -- and I'm not giving them up.)
Would a daily zyrtec help with the cat issues, Kestrel? I know it keeps my 'itches' at bay.
Love coconut icecream. Seem to find it at asian restaurants a lot. I've never made ice cream myself but am starting to consider it.

Testing is good sometimes if you want to know for sure, or in the case of my daughter, her doctor wanted to know for sure about Celiac, but in reality, you know your own body and how it reacts to certain things. If something bothers you, then don't eat it. I know sometimes doctors are reluctant to say eliminate things, think we can't do it or it's too hard, but what's hard is feeling sick all the time! I remember reading an article that said it was DANGEROUS to follow a celiac diet if you weren't celiac! What nonsense! Probably written by a wheat grower!;)
Congratulations on the weight loss! I think I need to go through my recipe file and maybe start a thread for special diets/restrictions. I am working on a pizza crust that uses buttermilk and egg but maybe substitutes would work.
What are some of your favorite dishes with allowable ingredients?
Peggy, you make a good point. I didn't follow my "gut" (hehehe) until someone actually put me on an elimination diet. Oddly, it turned out that I reacted to all the foods I already KNEW I was reactive to...but couldn't somehow bring myself to stop eating them (and defy my family's diet preferences) until faced with the evidence from my food log. Life in my body is much more comfortable with the way I eat now...not really restrictions or limitations, it feels more like freedom from symptoms. Well, except the runny nose and that MIGHT be the dog...but he's staying. And Yay for Zyrtec.
I ate the commercial cocoanut ice cream last summer but it is also one of my major binge type foods. When I ate dairy, I could easily dispose of a half gallon in a day or so, which was so bad for me on so many levels. I would be so sick now it I did that! Anyway, I am not going to try to make any ice cream. But I do wish all of you well with that and I love hearing about it. Some sort of vicarious pleasure, I guess.
I'm on a durian kick, so would like to make ice cream from that. I bought one yesterday. Spiky little thing...I'd be interested in hearing about coconut ice cream experiments as well.

Peggy, I had no allergic reactions at all (that I was aware of). I ate anything and everything. But I gained weight. I got tested accidentally, so to speak -- I went to and ENT for a throat problem, and unbeknownst to me, in Idaho (and maybe other states; I don't know), ENTs have to do an allergy residency, so I guess they're allergists too since ears, noses, and throats are common places where allergies show up. Anyway, she suggested the test, and lo and behold, those particular foods are problems for me. So I gradually eliminated them, and it was remarkably easy.
I've come to look at those foods as addictions, because as I said, if I start I can't stop, except I've never been particularly fond of corn or soy, for some reason, so those weren't an issue. And I know coconut/rice/almond ice creams aren't dairy, but they're so darn good and creamy and have such great texture that I love them.
I have no special recipes -- I use the gluten-free flours for waffles, and mix in oats and nuts and seeds and what-not, no eggs necessary, but otherwise use few bread-like foods. Ocasionally a gluten-free tortilla. I haven't baked anything in ages. Everything else is just adjusting recipes. Actually quite easy. I do buy egg-free mayonnaise and coconut butter. I don't feel deprived at all. Except for the ice creams :~). And I know that I can have anything I want for a treat, now and then, and I do. :)
Well you certainly have accomplished something with your weight loss! And you are to be congratulated! Be careful with corn, and/or soy as they put this stuff in everything! Same with wheat, or barley. Even things you wouldn't imagine has it in it, but I'm guessing you already know this.
It's getting easier for those on restricted diets (and by restricted I mean you can't eat the biggies like corn, soy, wheat) Labeling is helping, (thank you government for requiring this on all foods) and general awareness helps as people can be supportive, if not directly helpful, due to better understanding.
... yeah, I "already know this", but you know, often I just don't check labels like I should. I take my lack of obvious allergic reactions for granted and I just don't pay enough attention sometimes. My husband is gluten sensitive, and his only reaction is HIGHLY elevated liver enzymes, which are totally normal when he's off gluten. He's always been high-energy -- working for the Forest Service out in the woods most of his career, fighting forest fires in the summer, etc. etc. -- and now that he's gluten free he has so much MORE energy he drives me crazy! Sometimes I threaten to sneak gluten back into his food to slow him down some ... sheesh ...
