I drove a ways today to Whole Foods to get some Vegan whipped cream in a can, since DD is coming this weekend and I wanted it for a vegan chocolate pie I'm making for her. but they didn't have it. :(
I bought some soy coffee creamer, thinking there might be something I could do with that to make whipped cream. But when I got home, I googled a few things and discovered that its pretty common to make Vegan whipped cream out of coconut milk. You refrigerate it so the liquid separates from the solids and then you drain off the liquid and whip the solids, adding as much powdered sugar as you want. Sounds great! Yes, it has a coconut flavor (I've read), but I think that would go well with a number of deserts.
Anyone ever try this?

Have never tried it but saw a blog connected to Facebook where they did use some part of the coconut to make the whipped cream. :).

That picture looks so good! Looks like they just made the sweetened coconut milk into the actual pie. Yum!
I've recently seen the "Jazzy Vegetarian" on PBS. I guess she's a Vegan and a Jazz singer. She made "pots de creme" for Vegans and I tried it it and it was wonderful.
So I decided to gild the lily and put it in a graham cracker crust and top it with whipped cream, and it was even better! But DH and I used "real" whipped cream. But I'm sure this
coconut whipped cream will be really good on it too.
This recipe is really good to know, since it can be really hard to find the soy whipped cream.

Oh, vegan whipped cream is very good. But I've only had the canned variety. You could probably find it at the HFS. I've only ever bought it a few times for T-give, pumpkin pie.

they didn't have it at Whole Foods or Trader Joe's.........which is what prompted me to google how to make it.
But the "canned" stuff is surprisingly good.
