OK, I cheated, because I'm on a semi-low-carb diet, and I fed the last of the lettuce to Otis The Mighty Guinea Pig this morning, but still, here's today's BLT rendition, nothing from outside walking distance of the house:

OMG that looks good!!! I've been discussing bacon and charcuterie in general with a couple friends, one of whom has family that raises hogs so could be a potential pork supplier. Do you know the basic outline of brining, smoking, etc. process your producer uses?
I will ask for instruction in those mystical arts :-)
