I made this soup today, with some alterations. It is incredible!

I made it with no cheese, beef broth, or butter. I wanted something totally vegan.

My changes:

All olive oil, with a bit more added when I was cooking mushrooms
2 cups water
14.5 oz can of petite diced tomatoes, undrained
6 oz can of tomato paste
1/2 cup red wine
Extra garlic
Fresh ground black pepper at the end
Orzo cooked separately and then added

I cooked the soup more than the recipe called for to cook off some of the alcohol, while the orzo was cooking.

It's very rich tasting, very hearty. Perfect for the colder months.

Oh Tradd, that looks scrumptious! I;ve been on a bender for tomato soup ever since I visited Switzerland some years ago and found it on all of the menus.

Last year I conducted my own little private tomato soup taste testing among restaurants here and found #1 to be (not surprisingly) at a nice Italian restaurant. But guess where #2 was? At the hospital cafeteria!!!!! Color me shocked!

I believe that the quality of canned tomatoes is important. I have tomatoes from our garden in the freezer and I often use them to make tomato soup but it comes out no great shakes.

That is making me hungry! I love mushrooms - maybe I'll make this for our Thanksgiving potluck!
