View Full Version : A new meatless crockpot recipe that will make many main dish servings?

We generally mix up batches of black bean chili or a veggie soup of some kind in the crock pot, then freeze it in dinner sized containers for some easy weeknight suppers with a salad and fresh bread.

But I'm getting tired of our usual repertoire of crock pottery. Does anyone have a favorite frugal vegetarian (for my husband) main dish crock pot recipe they really really love, maybe with a lot of veggies in it? He also eats seafood.

We just finished an Argentinian vegetable stew. I made it on the stovetop, but I'm sure it could be adapted to a slow cooker -- maybe 4 hours or so on low, keeping the steps at the end the same but maybe giving them a couple more minutes because a slow cooker runs at around 220-250 degrees. The recipe is from GOYA (hence the product "suggestions") and the procedure below is for the stovetop.

Argentinean Bean and Vegetable Stew (Porotos Guisados)

Ingredients

1 cup GOYA® Sofrito (http://www.goya.com/english/product_subcategory/Condiments/Marinades-Cooking-Ingredients#44) <== onions, garlic, & tomatoes, canned or frozen or make your own. Sofrito can be used in many dishes beyond
Central/South American ones so buying/making it is not a huge waste
2 cups Chicken Bouillon (http://www.goya.com/english/product_subcategory/Condiments/Sazon-Bouillon#33)or broth
4 cups water
1 packet GOYA® Sazón without Annatto (http://www.goya.com/english/product_subcategory/Condiments/Sazon-Bouillon#32)<== I bought another brand which did not have MSG in it because I could buy just a packet or two. if this isn't
easy to find, use MSG. If you don't want to use MSG, just use salt to taste or skip it.
½ lb. potatoes, peeled, 1 inch dice
½ lb. sweet potato, peeled, 1 inch dice
½ lb. squash, peeled, 1 inch dice
1 cup cabbage, ½ inch dice
1 can (15.5 oz) GOYA® Great Northern Beans (http://www.goya.com/english/product_subcategory/beans/Canned-Beans#5), undrained
½ cup GOYA® Frozen Peas (http://www.goya.com/english/product_subcategory/Frozen-Foods/Vegetables#129)
1 tbsp. fresh minced parsley for garnish
Accompaniment: 2 cups cooked CANILLA® Extra Long Grain Rice (http://www.goya.com/english/product_subcategory/Rice/Basic-Rice#17)<== or brown rice or noodles or ... :)

Directions

In pot on medium high, combine Sofrito, bouillon, water, Sazon, potatoes, sweet potatoes, squash and cabbage.
Bring to boil, cover, lower heat and simmer for 10 minutes.
Add beans, cover and simmer for 10 minutes.
Add peas and simmer for 5 minutes.
Check that all vegetables are tender.

Serve garnished with parsley and rice on side.

Always make split pea soup in the crock pot---making some soon, in fact!

There are a good variety of recipes here. The vegan pumpkin chili is pretty popular.

Some people like to use these recipes as a healthy base and then add a small bit of fat or some dairy ingredients to them. Like a dab of greek yogurt is good in the pumpkin chili.

I freeze a lot of crock pot soups and like navy bean soup with onion, celery and carrot. A variation I do is to add a can of corn. Also, lentil soups. I'm not adverse to calling a baked bean type crock pot recipe a main dish, but usually have to add a little pork or bacon for my tastes. I make a root stew with potato, turnip, carrots, onion and sweet potato plus some cubed tempeh. Potatoes don't seem to freeze very well, though.
