View Full Version : Baking Time for Mini-loaves?

I'm making some mini-loaves of molasses ginger bread for gifts. I've tested the recipe in standard sized bread pans and it takes 60 minutes at 350 degrees. I'd like to make the same sized recipe, but divide it into mini-loaf pans that are about 6x3.5x2 inches. Any suggestions on how (or if) to adjust the baking time for the smaller loaves? Appreciate any help!

I always bake things until they are "done" using the toothpick test. I don't really trust that my oven works the same as the recipe testers. That said, a good guideline for mini loaves is to set the timer for 30 minutes (yours will likely need at least 10 minutes longer than that, but better safe than sorry!) and test. At first, it will just be visual (it will look set or not) and set it for 5 more minutes and then move to the toothpick test.

Your bread sounds good! Your recipients are lucky.

About the same as above. I always set my timer for 35 minutes, then test with a toothpick from there on out. If memory serves, 40-42 minutes was the actual time for my mini loaves. Have fun with your molasses ginger loaves - it sounds wondermous.

Thanks! I tried it this morning. The toothpick method seemed to work great. 35 minutes plus a couple more for insurance. Sacrificed one loaf for a taste verification. I'll have to make a couple more batches and now I know. Here's the recipe if anyone cares. I added a handful of dried cherries and only used a dab of oil.



1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cup all-purpose flour
1 1/2 cup whole wheat pastry flour
1 tablespoon ground ginger
1 teaspoon ground cinnamon
2 eggs
1/3 cup canola oil
1/4 cup unsweetened applesauce
1 cup brewed coffee, at room temperature
1 cup molasses
Wisk dry ingredients together. Wisk other ingredients together. Mix until just combined.

What an interesting recipe: coffee and molasses! I'm intrigued and tempted to try it - but alas, probably won't. DH doesn't need sweets around the house (even though I had to make a batch of banana oat muffins tonight to use up the 2 black bananas. Semi-healthy for him, and he can grab 1-2 out of the freezer for a quick nukeable treat.)

And how sad Rogar that you had to "sacrifice" one loaf for a taste-test. :)
