This time of the year, with a nasty flu bug making the rounds, the holiday stress, and heaps of sugar from holiday treats depleting our poor immune system, I'm trying to counteract it all with consuming lots and lots of garlic--the natural anitbiotic.
Does any one else do this too?
Tonight I marinated (for 4 hours or so) sliced chicken breasts in olive oil. fresh lemon juice and lemon zest, and a bunch of sliced, fresh garlic...then roasted in the oven.
Another recipe is cooking sliced broccoli stems and crowns with olive oil and minced garlic at 425 for 20 minutes, then topping with a squeeze of fresh lemon, lemon zest and tossing with some freshly grated cheese. My broccoli-hating DH gobbles up the hated vegetable this way.
Love to hear you easy-peasy garlic recipes...I love the old "stinkin rose."

We use a lot of garlic. Rarely a dinner goes by that it isn't in something. The same with onions and rosemary.

I don't alter/change my level of garlic intake at any point over the course of the year. Instead, I, we, consume plenty of garlic with nearly every dish (outside of basic breakfasts and lunches), so I figure I get more than my share year-round.
Take an entire head of garlic. Cut off the top, just exposing the very tips of each clove. Place the entire head with all the paper still on it in a ramekin and pour extra virgin olive oil all over it and bake it in the toaster oven for 20 minutes. Take it out and push the cloves out of the head and back into the olive oil. Then spread the whole mess (all of it) on toasted Artisan bread. So freaking good. The garlic will be so sweet.

I do enjoy roasted garlic in various dishes. But as far as immunity goes -- the best prevention I've discovered is a high-vegetable diet. I haven't been sick in a couple of years.

I can't cook ANYTHING without onions (also good for immunity), and we use an awful lot of garlic. Love the stuff.
I used to make "Chicken with 40 Garlic Cloves" - a pain in the butt to prepare, but I remember the sauce it made was divine.

This was yummy!! Made it last night with the addition of soy sauce, I've been lookin for an easy way to cook broccoli and getting rid of my steamer :) His may be it!

The allium family just about my favorite family. I love onions and garlic so much that as any one time I can tell you how many onions I've got in the bin and could give you a good estimate of how many garlic cloves I"ve got. We grow tons of leek. Leek is lovely in soups, it is so delicate and tasty.
For breakfast today I had brussel sprouts sauted with onions and garlic. One really cannot eat onions and garlic too often.
This year DH grow a lot of onions so I couldn't do that estimation trick. The garden onions saved us a lot of money. We just finished the last of his onions and I bought some last week.
And then there are my fabulous ornamental alliums, I grow several kinds, they are killer garden plants. After iris 'n lilies they are super special.

Yes--it's important that one knows when one is down to a couple of cooking onions, one big sweet onion (foreign or domestic), and a head or two of garlic so that one can replenish one's supply. Like eggs and sambal, allium roots (allia?) are absolute essentials in my house.
I would say a hearty chicken soup with bone broth, colorful vegetables, and a head or two of garlic would be just the ticket for immune fortification.

Glad you liked it too! We've been eating a lot of broccoli this way! I love how the garlic slices get all crispy. And there's something so delicious about the combo of garlic, olive oil and lemon that I adore...I'm going to try other things this way...it's pretty good as a simple topping for linguine, too. Adding a bit of lemon zest really amps up the flavor.
