Heya!

So this was my first year canning and I went to pull out some of my tomato jars today and noticed 2 had some extra head space. It's probably an inch and a half from the flat lid of the jar. Has anyone had any problems with extra head space? They are sealed firmly and I can pick up the jars by the edges of the lid (with no screw band) without it budging and also the button is pushed down. Any help is much appreciated! Thank you!

You're probably fine. Probably some of the liquid leaked out while you processed it. So long as it is still securely sealed and of course always check when you open it for mold, smells etc.

I am self taught canner for 15+ years, so far so good. I highly recommend The Ball Blue Book for canning.

I second the only ever using the"Ball Blue Book of Canning." It is the only true reliable source for canning...:)

I use the Ball complete book of home preserving. It's awesome! I've made so many recipes in there!

Yes, the fluid came out during canning. Supposedly, that's from the temp fluctuating too much during processing. I always had a heck of a time keeping my temperature constant on my electric stove.

Thanks for your input everyone. I popped open the jar tonight and it smelled fine, I pureed it and mixed it into my soup! Tasted good!

I think CathyA is exactly right. I also second the Ball Blue Book, its the home canner's bible.
