For those of you who like smoked salmon (others will find this gross)

Here's the challenge, sort of like a puzzle:

We both like smoked salmon.
We received, as a gift, a huge smoked salmon filet (4 pounds, and roughly the dimensions of a grown man's thigh it seems)
It is sealed in its package.
We can freeze it, still sealed in its package, for a year.
If we open it, we are supposed to eat it all within 10-12 days.
I'm unsure whether they recommend freezing it after its package is opened. Their web site does not mention it.
There are only two of us.
We don't know anyone else who likes smoked salmon.

Any thoughts or creative ideas on how to not waste this gift? We both love the stuff, but just can't envision eating 4 pounds of it in less than two weeks. Gah.

Thanks, creative foodies!

While still frozen:

- remove from packaging
- cut into appropriate sized pieces
- vacuum seal pieces you aren't going to use immediate, pop into freezer
- lacking a vacuum sealer, use a freezer bag, submerge bag in water before closing it to displace air and achieve slacker vacuum seal.

Thumbs up on the smoked salmon. Yum!! Wish we lived closer. Sounds like a great problem to have. Add horseradish sauce, capers and onions. Breakfast, lunch and dinner for the next two weeks.

I used to work for a fisheries organization. Yes, you can freeze smoked salmon. Cut it up into usable portions. Then I'd use plastic wrap on each portion and then put them into ziplock baggies. Or, if you have a food saver, vacuum pack each portion. Then use it up--general guidelines are within 6 months, but I'd try for 4 months if possible. That's a pound a month. It's a tough sacrifice, but if you try hard, you can do it.
