I want to try this recipe from vegetarian times but I cannot find this squash, I find butternut, acorn and spaghetti quite frequently. I am thinking a small acorn squash would work.

In my experience, of those three choices acorn is the closest to delicata in flavor and texture.

Delicata has a smoother texture than some squashes; ideal substitutes would be kabocha squash or pie pumpkin. As Kelli says, any of the three you list will work. But IMHO butternut will come closer to the smoothness and dryness of delicata. Or cook the acorn squash a little longer to get rid of some of the moisture.

I've never seen nor heard of this squash. I guess the only place I could find it. Would be in Whole Foods or Wegmans?

I went to whole foods, I don't go there often, just for this squash and a spice. I didn't fine either one, so I am going to try it with the acorn I think, even though I do have some butternut. I will let you all know how it turns out

It's a lovely squash, we grew some year before last in our beds up at my parents' place about an hour away. It's one of the few veggies (squash in general) that we can put in the ground and leave alone for several months. My dad waters, but they don't weed or pick, so it works out well. We are trying to think of a different veggies to give the beds a rest from squash/pumpkins, but haven't come up with one yet. Ok, that was off topic!!

I’d go for butternut too, though that’s just me being a nitpicker.I’d go for butternut too, though that’s just me being a nitpicker.

Delicata is way sweeter than all those other squashes mentioned as substitutes. It's pretty easy to grow too.
