My daughter has been having stomach problems, she has narrowed it down to dairy and meat. That is a lot of food! I am vegetarian which helps with knowing what to eat but now she is doing her best to be vegan and see if that helps. We do think she will be able to add in chicken but beef will likely be an issue.

Sooo, now she does not like any of the vegan recipes I have that are things they ate as kids sometimes. Maybe this bleongs in the food/recipe area but I am looking for good recipes for teen/young adults who are vegan, and they can take to work,

I have a few my teens love: "Shepard's pie" made with lentils, a fruit/juice dish that I call Orange Sunshine and my kids call Orange Glop. "Tacos" made with pink lentils instead of beef, pizza made with soy cheese and green peppers, vegetable stew. Let me know if you want any of those recipes.

However, for a kid that age (working) I would let it be her problem to solve. i.e. I would tell her to research a couple recipes that she wants to try, buy the food for them myself and let her cook them. This gives her ownership of a problem that is really hers (she has to figure out a way to eat that her body likes, as we all do, it's part of being a grown up) but also removes a couple of the obstacles to success: having the money to try new dishes and wanting to not like whatever your parent recommends because you are a teen/young adult. As a teacher, you can recognise that is just a developmental stage and try to step over it. :~)

Voluptuous Vegan is probably my favorite vegan cookbook -- but there is a learning curve (even if you are vegetarian).

I find that the easiest thing, though, is soup. When I was vegan, I mostly made soup for dinner with a nice salad (veggies and grains usually) on the side. It was a very simple, satisfying way to eat.

A book called "How it All Vegan" is such a great way to introduce someone to vegan eating! As a 25-year vegetarian I found all of the recipes super easy to follow and most ingredients can be found in a typical grocery store. If your daughter is at all open to ethnic food, eating Asian foods (buckwheat noodles, stir fry, spring rolls) is a great way to ease into veganism. Good luck!
