Hmm.. I thought I wanted to eat lots of parsnips when I bought two bags of them, but somehow, now I don't. Can I parboil them, freeze and then crisp them up in a frying pan when i want to eat them?

Probably. What I do when I have too many root vegetables is either roast them (in a combo with other root veg) or make a big pot of soup.

Also try:

Mashed potatoes and parsnips
Potato and parsnip soup with sausage/ham/bacon/pancetta
Pasta primavera
Using grated or mashed parsnips to sweeten baked goods--see UK 1940-50s recipes
Roasting chopped parsnips and a contrasting color root vegetable such as carrots and then sprinkling a savory herb over them
As one of the root vegetables under roasted meat/poultry
Carrot cake, but with parsnips
Parsnip fritters or pancakes
Roasted parsnips with horseradish sauce or wasabi or tossed with a chili relish
Curried parsnips or soup
Julienned or grated in a vinaigrette slaw

We have cleaned, par-boiled and frozen them to use later in soup or puree. That worked great. We've also roasted them with other root veggies as a side dish. Also great. I've never tried to crisp them up in a frying pan. Not sure how crispy they would get (unless you basically fry them in oil). Guessing they would get just a little chewy about the time they got a nice caramelization. That sounds yummy to me!

I slice, parboil and freeze parsnips but if you have too many I wished I lived next door to you as I'd be glad to help you dispose (read eat) of them.

Ha - good idea. Unfortunately, mine are already in a plastic bag in the fridge having come via ALDI!

I was just over at EatYourBooks.com and checked to see how many parsnip recipes they had indexed. So far, it's over 4500. Some more that sounded interesting:
Curried parsnip and apple soup
Parsnips with brown butter and bread crumbs
Parsnip gnocchi
Warm potato, parsnip, and artichoke salad
