Last week I "pinned" :) a recipe for roasted vegetable soup, something I've never tried, and it sounds like something we'd both really go for. This one used roasted tomatoes, onions, sweet potatoes and carrots.

The techniques for the soup would stay the same: roast veggies, add to some chicken broth, blenderize it, then add more chicken broth and seasonings like basil and oregano. But never having done it, I'm wondering about what veggie combos would be tastiest. DH isn't fond of sweet potatoes; and we never buy tomatoes in the winter, so I'd be using our home-canned tomatoes, which I'm sure wouldn't roast well. Beyond that, I can see that it would be a very versatile recipe, many different veggies could be roasted and used, but I'm not sure what combinations would be best to try/start with.

I'll bet many of y'all make something like this. What are your ideas for the tastiest roasted veggie soup combinations?

What about roasted squash (butternut, acorn) instead of the sweet potatoes that your DH doesn't care for? Roasted cauliflower might also make a nice addition, although the flavor might get lost. Plus, roasted garlic is always good, especially if you are already firing up the oven. Do you have a stick blender? I find it so useful for this type of thing. So much easier to use (and clean) than a standard blender.

I've made roasted cauliflower soup with a garlic broth base - comes out very tasty, mild, and creamy (pureed).

Peppers of all colors, garlic, onions, mushrooms and fresh basil
all roasted together with some olive oil would really go
well into a soup.
It goes into a spaghetti sauce great or simply over pasta as is :)

I would use carrots, parsnips, turnips, garlic, and onion. I might also add potatoes or cauliflower. YUM!

Thanks for the ideas everyone! Give me a week or two and I'll let you know if I turned out something edible.....
