Why have none of y'all mentioned these to me before?!!! :)

Saw the idea on Pinterest: one dill pickle laid upon a cream-cheese-spread slice of ham lunchmeat, wrapped into a roll then cut (or not) and consumed.

But since we're all Simple Livers, we do with what we have on hand. What I had was a package of bologna in the freezer, a block of cream cheese leftover and still not opened since the holidays (!!) and the bottom of a giant Sam's Club jar of dill pickle spears that is getting seriously old and needs to be eaten.

I did spend .99 on a bunch of green onions, not being a fan of plain cream cheese. Cream cheese needs to be infused with the flavor of green onions. Always.

It might be just me, as DH hasn't tried them yet.....and of course it ain't health food.....but.....

Seriously delicious. From something so simple and easy. These ingredients just go together and explode in the mouth in a sensuous delectable mouthbomb. I'm thinking it's too bad we don't socialize much anymore, as I would be the hero of the next year's worth of potlucks by bringing these.

If you make these regularly, you should have told me about them. If you haven't made them yet, you should.

This was top drawer in the 70's....lol...thank you for the reminder....I haven't made them in years.

This is classic Minnesota potluck fare. I LOVE pickle roll-ups!! I have only made them once and learned that it works best (probably from one of the Twin Citians on SLF ;) ) if one pats the ham dry.

I think perhaps no one mentioned them because they are pretty common. (?) Like PBJ's? I'm actually not as wowed by them as you are, but I like them just fine!

I really thought I KNEW all the 70's "top drawer" snackie delicacies.....it's when I learned to cook, to be interested in new recipes. Pickle rollups never made it to SE Kansas, I guess.

Try them with the small sweet gherkins. Yum.

A little horseradish in the cream cheese is good too.

You may also like a variation with smoked turkey.

I like thinly-sliced turkey with Havarti rollups, and I bet scallion slices (or olives) would make them even better. I also like salami rollups with blue cheese. Gherkins sound good. Now I'm hungry.

They are especially, extra good when someone else makes them all you have to do is eat them.

Okay, these are new to me, too. Guess I will have to try them soon. We always have cream cheese, and a variety of lunch meats, so I shouldn't have to make a trip to the store. I am a sweet pickle fan, though, so I think sweet gherkins sound yummy! Love bread and butter pickles, but haven't seem them in any kind of chunky form. Hmm, could that be a canning project for this summer?

They did make it to Nebraska in the 70's. Like Tradd, we always had them with the tiny little sweet gherkins. My Mom uses that Buddig dried beef. I'm sure they have it in KS, too. It's not that dry, sliced paper thin, packaged in small packs that hang out around the other lunch meats. Probably a net negative nutritional value, but tastes mighty fine with some cream cheese and a gherkin! Love the green onion idea Lin (you're right about the cream cheese).
