Thanks to all who gave ideas for my excess parsnips.

I ended up making a big batch of parnsip and apple soup which has been really delish.
Ingredients:
1 1/2 lb Parsnips
Stock
1 Chopped onion
1 - 2 Chopped apples (tart ones are best)
Squirt of lemon juice or cider vinegar
Thyme
Seasoning


Saute the onions until nicely browned then add everything else and simmer until soft. Whizz with a hand blender and season. Serve with fragments of crispy bacon and nice bread. yum.

I'm glad you have been able to like them. In our older years, we have re-visited several veggies, trying to broaden our veggie horizons. Alas, parsnips just don't make the cut.

Agreed, they are horrible, both parsnips and thier cousins turnips. There aren't many veggies I hate other than those.
