Who would you like to see take the Live Below the Line Challenge -- for their cooking skills, their clever frugality, or because they are in a position for what they do/learn/experience in the challenge to make a difference. All those chef/judges on "Chopped." Let them open that basket of miscellaneous items and make a fancy appetizer, entree or dessert with them.

Me too! They always have to throw in some weird ingredient that doesn't fit with the others. I mean, the last show I watched, on one dish they had to use both watermelon and sardines in it. :confused:

Graham Kerr ( The Galloping Gourmet) He lives in in my state now and grows alot of organic foods I would love to see him make a come back on some of the foodie TV stations or even PBS agains

Wow! Can we pass along this list to the Food Network? I'd love to see some of these folks known for using expensive and somwhat exotic ingredients take this challenge. Then I"d like to see the recipes gathered together in a cookbook that could be used by anyone, anytime. Think what a boost and morale builder it would be if food pantries, food stamp offices, etc., could print up some of these redipes and include them with the bags of food or make them available in food stamp offices. Of course, literacy is often a problem, so there are some who wouldn't get as much benefit from them, unless there is someone else in the home who can read the recipes. But I think that if I were receiving food stamps I would love to have some recipes from top chefs that I could use on my budget!

That would be enlightening and helpful. Have been thinking of a few more people to round out the list. Also think it would be helpful to have chefs that are good at Eastern European/Russian, other Asian chefs, some chefs from African areas with a good range of food items, France, Vietnamese, Southwest US and some other regions that would give diversity to the challenge. Would welcome suggestions to round out the list.

*Elizabeth David’s culinary descendant—suggestions for a person or what to focus on from David’s wide range of culinary skills?
*Carol Deppe—would like to see her do the challenge focusing on the five items from her book Resilient Gardener (beans, corn,potatoes, squash, eggs) plus other garden items
*Fisherman/woman(any suggestions?)-- in conjunction with handmade primitive fishing equipment at a stationary camp with a garden.
*Jeff Hertzberg and Zoe Francois—with the added bonus that they can use any of their sourdough starters and don’t need to account for any of the original yeast costs—just the flour that would be in the portion of the starter.
*Steve Raichlen—with the added challenge that food be cooked with foraged wood or limited to refugee wood ration amounts which I think is 2Kg per day or average reasonable wood usage—not sure of amount. Would could be foraged in advance as it normally would be so it can dry properly. Use of some aromatic wood also desirable(hickory/fruit/herb). Grilling of garden vegetables encouraged.
*Stoves person—someone using one of the low tech energy efficient natural fuel stoves
*Jerry Traunfeld-- in conjunction with locally grown herbs and spices. Good at taking the same ingredients and using them in ways that make them seem different.
*Jon Traunfeld—would like to see him do a spring version and a summer version along with his Salad Table and a small intensive garden.
*Grace Young-with the added challenge that all the cooking except the rice be done in a wok and/or wok steamer basket.

Debi Mazar and her husband, chef Gabrielle Corcos, are participating in the challenge, and shared their tips for surviving the week:


We're going to shrink our plates, so it still looks like a lot of food. Obviously it's a very heavy carb thing," she said, listing some meal ideas that included using old bread to make the classic Tuscan vegetable soup ribollita or making basic rice and beans.
Pappa al pomodoro was suggested. They are on the show Extra Virgin on the cooking channel. It would be enlightening if they did a US version and a version in Italy where they have the family farm and could use the fresh produce there.
