This recipe is for people who don't especially like lentils but like a savoury dish. I have taken it to a potluck and had great feedback and appreciation for a vegetarian dish.
I like it because it is simple, colourful and bright in taste.

Here is the Recipe for the Lentil Dip/Salad:

1 can lentils (drained and rinsed)
1 red pepper finely diced
1 cup dried currants
2 green onions chopped

Dressing:
1/3 cup olive oil
1/4 cup red wine vinegar
1/2 tsp cumin (or more to your liking)
a pinch of cinnamon if you like (the original recipe calls for 1/2 tsp, but I found it a bit too much)
1 tsp lemon juice ( I also happened to have a lime, so I added same amount of line as well for extra zing)
2 tsp pure maple syrup ( I'm sure honey would be fine as a substitute)

I used the equivalent of the19oz can and that seemed about right.

I might try that!

I have had some success with dry (rather than canned) brown lentils, simmered about 30 minutes, so still firm -- not pulpy.

Rather than currants and syrup, I use chopped red peppers, green peppers and garlic. As a final step I put the lentil mixture in a serving bowl, garnish with fresh parsley, cover and chill for at least an hour.

I bought a bag of lentils today, determined I will use them!

I was reminded that one can use this salad as a dip with nacho chips as well.
