Our neighbor just gave us a dozen duck eggs as a thank you for borrowing our tractor today. We've never eaten duck eggs before. I'm assuming I can use them just like chicken eggs, but do they taste any different? Anything I should know before I go frying up an egg or making a frittata? Are duck eggs better used a certain way?

They taste richer (stronger) than hens' eggs. I like to use them in omelettes.
Don't be afraid of them. I had heard for so long how STRONG they were or how different they were, yada yada yada, so I finally got some at the farmers market and I loved them. To me, they tasted just like good, farm raised eggs where the chickens run about eating bugs and such. Not like the insipid pale things they sell in the stores. They tasted like REAL eggs! Make an omelet, or a frittata. Or bake with them. Just adjust for the size, but because they are 'stronger' you can toss all sorts of yummy things in and they won't overwhelm the eggs.
My only problem is although I like eggs, eggs don't exactly like me and I can only eat one or two a week, or I pay for it. If I could eat eggs everyday, I would absolutely keep ducks over chickens. Kaki Campbells would be my choice.
I've used duck eggs for baking and they are fine. However, for eating I don't like the taste--too strong and gamey tasting. I do love fresh farm eggs; they taste way better than store bought.
