Well, a neighbor dropped off some fresh poblano chile's. I roasted and peeled them and chopped them. Beat 2 eggs into a cup of milk and added three table spoons of flour, added cheese and mixed in the chopped chile's. Poured those over softened corn tortillas, covered and baked them for 40 minutes and voila! yummy, chile relleno casserole. Really like an omelet almost.

Anyone have a good recipe for baked eggs? I have seen a few, but haven't chosen one to try out yet.
