oh yum, I made saag paneer, actually saag tofu, yesterday. It is my comfort food as a grownup. I also made rice and packaged that for easy lunches. The individual rices and saag paneer pouches are good but expensive. I have had waaay too many vegie burgers from Burger King the last 2 weeks. I also have fingerling potatoes that I boiled and then roasted with olive oil, jalapenos from the garden and chili powder. I made some manicotti last night which the kids love so that will be a few lunches for my daughter as well. I am looking forward to a much healthier lunch week,

Yum! DD and I love sag paneer (I always make it with tofu as well)!
I was poaching some chicken Saturday night and I used the poaching liquid to cook some black japonica rice. I've had forbidden rice before, but this is a variety of black rice grown in California. It is really, really good. DD will take that mixed with veggies for lunch tomorrow. Sort of like instant fried rice when a little tamari is added.
