I am looking forward to having leftover chicken fajitas for lunch today. Lunch is frequently leftovers around here. How about you--what's for lunch? Do you plan lunches or are they a "happening"??

This lunch was a "happening" -- as I dug out chicken backs and necks for soup, I found a couple of forlorn-looking bratwursts (or something like them) and a couple of hot dog buns. That is lunch today. Musgovian chicken soup will happen tonight.

I just picked up a vegetarian salad from TJs and added my own dressing and 1/2 avocado. That's not really simple at all, I should say I only eat food made from scratch but ... while that is the ideal, and I might prefer that, it ain't always so. If I have the energy tonight I'll cook a green bean dish for other lunches, if not well .... I often am pushing exhaustion with my life. But I do try, pretty much always cook dinners (fish tonight), often cook lunches.

Had a bowl of home made sausage, bean and kale soup with some parmesan cheese in it an a slice of bread with some earth balance spread on it. YummY!

I went to a favorite cafe for lunch with friends today - our annual first-day-of-school lunch. We caught up on the past 2 months, when we all had conflicting travel schedules. The laughs were well worth the cost of lunch. I had a balsamic vegetable salad and a cup of chicken posole. Delicious.

I've already packed my lunch for tomorrow: a salad with green leaf lettuce, shredded carrot, cucumber, olives, strawberries, and hemp seeds.

Oooh, yummy juice Jim!

I'm doing this crazy Whole Foods food stamp diet challenge, so lunches are all over the board, but leftover-heavy: beet burgers, hummus with homemade pita and lots of fixins, black bean chili with fresh corn cornbread. I was worried we wouldn't get enough variety (to economize on ingredients), but it's been pretty diverse so far.

Hmmm.......I had leftover cucumbers and tomatoes with olive oil/vinegar and then leftover cucumber salad (guess what I have alot of this year??), and then I had a piece of Udi's bread with sunflower seed butter and jam on it. Why am I always hungrier after I eat, than before? Then I had a banana.
Gosh, I'm going to miss summer veggies! Oh......and I had some left-over watermelon. I made some room in the fridge!

I don't think I'll be eating anything besides various forms of salad using things already cooked in my fridge for a few days. It's hot here again. Ugh.

Cathy, I used to wonder why I was constantly hungry, but low carb fixed that for me. Carbohydrates raise insulin, the hunger hormone. Eating enough protein and fat at each meal should help. "Enough" is an individual matter.

Today, a LARGE dark green salad and a small bowl of cantaloupe.

Excited that I have overcome my broccoli aversion!

Had a veggie melt. Sliced portobello mushrooms, red peppers, onions and Japanese eggplant sauteed in olive olive, served on sprouted grain bread with a slice of Muenster melted on top. It's part of my effort to eat more vegetables.

Four friends here for lunch, so did toad in the hole with onion gravy, glazed carrots and runner beans. The weather is getting autumnal here, so it really hit the spot.

Today I had a Subway for lunch. Wheat bread, turkey, no cheese, spinach instead of lettuce, and all the veggies except no jalapeņos. Very healthy. Then I had 2 chocolate chip cookies.

Ishbel, what is toad in the hole? I've heard of it before but have no idea what it is!

The leftover lamb shank from last night. Recipe was simple:

Braised lamb shanks, from a 4H lamb: Spice rub first, a few minutes on the grill to make flavor crufties, then the rest of the day simmering in a pot with some onions, garlic, and a bottle of wine. Win.

The sauce came out insanely good, though it is just a bottle of wine reduced, with some spices and lamb flavor. I think I'll serve the sauce over egg noodles for dinner tonight, and declare victory.

Last night I had my favorite... chips and eggs. Chips as in fried (olive oil) 'taters and eggs over easy. Yum!

For lunch today, another Mean Green for morning break, then a Joe Cross/Dr. Oz Gazpacho juice, slightly altered for ingredients at hand:

4 tomatoes
1 large cucumber
2 celery stalks
1 red bell pepper
1/4 red onion
1/2 lemon

Last week was pretty bad, ended up going out to eat once and getting ready made salads from TJs twice - in a 4 day week :). This week: green beans yesterday, green beans today (with tomatoes, onions, olive oil etc.).

Lunch today was a hearty turkey soup with chunks of turkey and spicy meatballs, celery, carrots, onions, and kale, with a base of bone broth.

Was out of town for training and the restaurant we were at had NO vegan dishes. Not even the 6 offered salads.

So I had blackened tilapia, Cajun style, topped with guacamole, and with a side Caesar salad.

And went vegan tonight.

For me, only protein and low or no carb works. Sometimes. But seriously I find finding that kind of food difficult.

I never make chicken soup twice the same way. I'll throw in leftover veggies, rice/noodles (if we have any; typically not); bits of ginger knobs; whatever. Sometimes Asian, sometimes western European, sometimes American. It's several good frugal meals when I'm done.

I've never heard the term.....but I love it! And intend to incorporate it into my cooking lingo.

I shall specialize in Musgovian casseroles.
