View Full Version : Broth vs. Stock
What is the difference between beef/chicken broth and stock? I see both at the grocery and don't know what makes them different?

I think stock is based on cooking down the bones, et al. Broth is based on cooking down the meat. Broth can also be made from vegetables. Stock should be thicker than broth. Broth should be clearer than stock. I think.
I know that I prefer to use stock because I usually use the meat as a prime ingredient, which leaves me with a carcass and therefore stock.

Yea I agree with above, I think that's the difference, stock is longer cooking etc.. The grocery store is probably using the terms interchangably though.

I think that broth is seasoned, with salt added, whereas stock is plain.
Thank you. Snce I don't make my own broth or stock, I have been using the store bought broth/stock interchangeably.
My understanding is that most people call it broth, but if you are a pretentious chef on Food Network, you must call it stock.>8)
Stock is really bone broth, with all the nutrients that implies:
