What are your favorite recipes for Baked Stuffed Potatoes?

Just wrote a blog post titled "Baked Stuffed Potatoes Two Amazing Ways"

The first recipe is called "British Baked Stuffed Potatoes," and it has broccoli-cheese filling.

The second one - "Southwestern Baked Stuffed Sweet Potatoes" is more unusual. It has Tex-Mex flavors, corn, beans, etc.

Hi the simple life, looked over your recipes and they sound so good. My Mom makes twice baked potatoes, I'll have to find out what the recipe is.

I grew up on the original and basic twice-baked potatoes. Basically mashed potatoes w/shredded cheese in the potato shell. In our daily life, I usually fix them the same way with the flavorful additions of bacon bits and green onions.

(Actually, I mostly never make them. Usually once I get the 'tators baked my inherent laziness says "aaahhh, it'll be fine with just butter and salt on top." And I quit there.)
