My best friend and her DH brought us dinner the other day. She made stuffed peppers. We divided the leftover peppers and she suggested that if you don't want to eat peppers again, just mash everything up and add a can or two of tomato soup; then you have stuffed pepper soup. I tried this and it was delicious. I would never have thought this myself.

Yum that does sound really good! Plus its a great way to change up a meal that's basically already made!

Hi Glo, I make my own vegetarian version of tht. Can see why it tasted so good!

There's a casserole recipe in "Better Homes and Gardens New Cookbook" (although can't tell you the version) that I had last weekend.

Ground beef, rice, tomatoes, few pieces of mild chilies, cheese, chili powder. Basically we determined the whole thing would taste MUCH better stuffed in peppers (I'd prefer the red peppers to the green ones myself for this) since duh, even if it claimed to be "a casserole", it was obviously stuffed pepper stuffing (without the peppers) we were actually eating. :)

Oh that classic cookbook, I often see it given away for free, it was $1 at the thrift shop, I now have two copies - don't get the brand new version it's too weird and gimicky.
