With such a variety of fillings, burritos can satisfy a variety of tastes and eating styles. Is it any wonder that burritos have taken a place alongside pizza and burgers as iconic food in the United States? Personally, I like the fact that families with mixed eating styles (meat-eating, flexitarian, vegetarian, vegan) can easily share the same meal.

We are huge burrito-eaters in our house, and anything that can be rolled up in a tortilla is fair game (breakfast burritos are a particular favorite)

Thank you (and Danielle) for including that perfect last step, baking them a bit to get a little crispiness on them. It adds so much, and we always seem to be too much in a hurry to enjoy that. Burritos figured prominently in our daily fare for last month's food stamp challenge on my blog, and we even made our own tortillas to save money. Viva el burrito!!!
