Just made a batch and it is ok....nothing special. Wondering if anyone has a recipe they REALLY like?

Funny you should ask. I'm making coleslaw tonight.

My quick-and-easy recipe is shredded cabbage, and carrots, apples peeled & diced, and raisins, and then a jar of Marie's Coleslaw Dressing (my DH LOVES it! He says, "I love 'your' coleslaw" but I keep telling him it's not mine, it's Marie's).

But I am also looking for a homemade dressing, so if anyone would care to share...

Nope, nothing healthy here. :~) I wonder what healthier coleslaw might taste like. I am willing to try anything, but I sure do love both the creamy and vinegary fatified sauces for cabbage and other raw vegetables.

We just shred cabbage (or buy it that way) and the packet they sell in the supermarket. The only changes we make, though, are to salt the cabbage and let it sit to draw out some moisture and then to use a good fat-free yogurt (like Nancy's) or a Greek yogurt instead of the mayonnaise. That makes the consistency of the dressing the way we like it.

Well, I just tried this one that was in Organic Gardening (http://www.organicgardening.com/cook/homemade-cole-slaw). For the vinegar I used Bragg's Natural Apple Cider Vinegar (I've never used it before and was dying to try it).

I'm of the mindset that mayo, like butter, gets a bad rap, so in my mind the measly 2T was not going to kill me. And I think EVERYTHING should have dijon mustard in it. The fennel seeds gives it a nice flavor. And I did add my apples and raisins.

So far, seems really tasty, but the cabbage hasn't "cured" yet (I like it much better the next day)

Anyway, here's the recipe

Ingredients
2 tbsp dijon mustard
2 tbsp mayonnaise
2 tbsp vinegar (red wine, white wine, or cider)
2 tbsp canola oil
salt and black pepper to taste
1/2 head green cabbage, very thinly sliced
1/2 head red cabbage, very thinly sliced
3 carrots, cut into thin strips
1 tsp fennel seeds
Pickled Jalapenos, optional

Directions
1. Mix the mustard, mayonnaise and vinegar in a bowl. Slowly whisk in the oil. Season with salt and pepper.

2. Combine the cabbages, carrots, fennel seeds, jalapenos (if using), and dressing in a large bowl. Toss so that everything is evenly coated and season with more salt and pepper

I use a mock recipe from Kentucky Fried Chicken's coleslaw. Really like it a lot. It is all chopped up small so I don't know if you would care for that. Let me know if you are interested and I will see if I have that cookbook unpacked.

By the way we also purchased a head of cabbage for making cole slaw this week.

I make a sauce with plain yogurt, vinegar and honey and then add cabbage and carrots. Don't do mayo anymore.

I don't think the recipes I use could necessarily be called healthy, but we sure do like them....

1) I have made this cole slaw several times recently & love how crunchy it is. We like it better with the 'oriental flavor' ramen noodles than chicken flavor called for in recipe

2) Tweaked from Memphis Jr. League cookbook
1 Head Cabbage shredded
1/2 C. sliced green onion
1/2 C. finely chopped green pepper (lots of time I leave this out)
1/2 C. finely chopped red pepper
sometimes I add grated carrots too
For dressing mix:
1/3 C. vegetable/canola oil (or any other light oil)
1/3 C. mayo
1/3 C. cider vinegar
1 t. salt
1 t. dill
1 t. mustard seed
1 t. celery seed
black pepper to taste


In a rush, I use the already shredded cabbage too.
And in a super rush, we like the Marie's cole slaw dressing too.

My very FAVORITE coleslaw is KFC... however, I didn't even imagine that it was healthy. I would truly appreciate that recipe!!!!! Thanks Chris. I also printed out the other recipes to try too. Thanks so much everyone!!! frugal-one

Hi frugal, Glad I have this book unpacked -- Top Secret Recipes. I have made this all the time we eat coleslaw and we love it!

8 cups very finely chopped cabbage (1 head)

1/4 cup shredded carrot

2 TBLS minced onions

1/3 cup of sugar (we use stevia to taste)

1/2 tsp. salt

1/8 tsp. pepper

1/4 cup of milk ( I have used evaporated if you don't mind the taste)

1/2 cup of mayonnaise

1/4 buttermilk, which is easy to make yourself -- just add the vinegar in the recipe to this amount of milk and let it sit a minute

1 1/2 TBLS. White vinegar ( I use white wine vinegar)

2 1/2 TBLS. Lemon juice

Chop up the cabbage, carrot, and onion very fine. About the size of rice kernels, I just use the Cuisinart and for the onion I grate it on the finest part of a grater so it comes out like mush. Combine everything else and beat until smooth. Add the cabbage, carrots and onions and mix well. Cover and refrigerate for 2 hours before serving.


Hope you will enjoy this as much as we do! (For the mayo you can also use Hellman's light...)

My MIL's favorite and mine too is equal parts of mayo and sour cream, mix in white vinegar or lemon juice to taste, add s & p and maybe some celery seed if you're feeling adventurous. Just Great! Lighten up with lower fat sour cream & mayo...don't use balsamic vinegar!

We just do a very simple cabbage, carrot, salt, pepper, mustard (the seed kind), and some vinegar and oil to taste.

I've made this a few times, I like it:

No-Mayo Coleslaw with Dijon Mustard Dressing Recipe

2 tablespoons Dijon mustard
3/4 cup cider vinegar
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/8 teaspoon celery seed
1/2 head green cabbage, shredded (I mix it up with red cabbage too, if I have it on hand)
4 medium carrots, peeled and shredded
1/2 large red onion, sliced thinly and cut into 1 inch pieces

Whisk the mustard, vinegar, salt, pepper and celery seed together in a large bowl. Add the shredded cabbage, carrots and onions. Toss together until the cabbage mixture is coated. Refrigerate for at least 1 hour before serving, so the flavors have time to marry.

ripped this out of a Diabetic Living back in 2008. DH LOVES it. Me too.

Gram's Holiday Slaw

1 10 oz. pkg. finely shredded green cabbage (6 cups)
1/2 cup dried cranberries
1/2 cup walnuts, toasted & chopped
1/4 cup finely chopped red onion
1/4 cup finely chopped green sweet pepper
1/4 cup cider vinegar
3 TBSP canola oil
1 TBSP sugar or sugar substitutes' equivalent to 1 TBSP sugar
1/2 tsp salt

In a large bowl, combine cabbage, cranberries, walnuts, onion and sweet pepper. In a small bowl, whisk together vinegar, oil, sugar and salt. Add dressing to cabbage mixture. Cover & chill for 1 to 24 hours. Toss well before serving.

Mexican Coleslaw

1 c finely sliced or shredded red cabbage

2 c finely sliced or shredded green or white cabbage

1/2 c sliced mild jalapenos (from a jar)

1/2 - 1 bunch cilantro (to taste), chopped (no stems)

Dressing:
1/3 cup apple cider vinegar
2 T honey

I dislike mayonnaise but like cabbage - this is a refreshing mayo-free version. It doesn't keep well; add the dressing just before serving.

Gardenarian, those are jalapeņos pickled from a jar, not the kind you can buy canned, right? This sounds good!

Yes, Steve, that's right - pickled jalapenos. I really like it as a side dish with cheesy refried beans.

Thanks, Gardenarian! I've been ordered by the other eater in the house to lay off serving cabbage for a couple of weeks. :confused: But when I can serve it again, I plan to make this. It sounds really tasty!
