I'm thinking of getting DH a Lodge carbon steel (http://www.amazon.com/dp/B005U93RYW/ref=wl_it_dp_o_pC_nS_ttl?_encoding=UTF8&colid=1C780SK00Y4JD&coliid=I2559Y00ZZOSC7) skillet for Xmas. The cast iron ones are great, but so heavy, and he has problems with his wrists.
Does anyone use carbon steel pans? It sounds great from the reviews - very similar to cast iron, but lighter and faster to heat.
