Went to Olive Garden with friends yesterday and had Zuppa Toscana. I loved it!! So I came home and looked up the recipe and found this copycat. I made it today and it was very good!! I will definitely make it again.

I used only 3 Italian sausages because that is what I had. I used mild Italian sausage but think spicy might even be better. Also used 3 slices of bacon and half and half instead of heavy whipping cream. I sauteed the onion and garlic before adding to the soup and put the kale in shortly after the potatoes so it would be soft. I never had kale in soup before and have to say I LOVE it!

I have had the recipe "pinned" for months, and have yet to get around to trying it but.....attended a meeting/dinner a couple of weeks ago, a soup supper, and one of the soups provided was the Zuppa Toscana. It was wondermous.

I have been making my version of that lovely soup for years. My recipe is slightly different and nearly four times the amount. I love it so much that I make a huge pot at least once a month. I never have bacon, so do not use that, and I use more than double the amount of kale or chopped collards...times four for the big pot.

I use all chicken broth for the liquids, no water, maybe half the garlic, and I dice the potato and sausage kind of small because I want everything in each spoonful.

Unless I bought the expensive organic cream, the regular whipping cream here has stabilizers in it, so I use half & half, too and really do like it even better. It is still amazing without the dairy. I stopped at the market on my way back into town this afternoon for collards and sausage, and will be starting it in a short while.
