Fiesta chicken
I am all about easy cooking because I am just too darn tired after work to do much and I really don't like very many crock pot meals (or maybe I just never found any recipes that I liked).
Anyhoo: Fiesta chicken
1/2 - 1 full boneless chicken breast
1 -2 TBSP chili powder
dash cheyene if you are brave :0!
toss together in something until coated
1/2 - onion, chopped
brown chicken and onion until done
add: a can black beans
a can whole kernel corn, drained
a can chopped black olives, totally optional
a can of rotel, drained, optional also
Add to skillet and simmer for 10-15 mins. Add 1/2 cup salsa. Stir and serve.
2 full servings with lunch left over.
'voila, a one dish meal. We really love it and hope you do too.
Note: I haven't tried it, but I think it would be good with sour cream and a side of tortilla chips.

Ingredients:
• 2 Cups rotini pasta, cooked
• 1 tbsp Oil
• 1 Pound boneless, skinless chicken breasts cut into bite size pieces
• 1/2 Cup Italian salad dressing
• 1 tbsp Chili powder
• 1/2 Cup salsa
• 1/2 Cup sour cream
• 1/2 Cup shredded cheddar cheese
How to make Fiesta Chicken Pasta:
• Heat oil in skillet on med-high heat. Add chicken.
• Cook and stir 6 minutes.
• Add dressing and chili powder.
• Cook 3 minutes or until chicken is cooked through.
• Stir in salsa and sour cream.
• Toss pasta with chicken mixture.
• Top with cheese.
• Fiesta Chicken Pasta is ready.

now, that sounds yummy! I am tryng to find low carb recipes. Low fat would be great also. That leaves, um, not so much since I am pretty picky.
