I had never even heard of okra let alone had any until I lived in Kansas. The first time I ever had it, it was made just as you did. Sooooo good!!!

Fried okra is one of the four best foods on the planet, along with crab, fried shrimp, and hushpuppies.
Just made a batch of Salvadoran style curtido (cabbage slaw) and some homemade red enchilada sauce to serve over black bean and sweet potato enchiladas.
I love fried okra--and chicken gumbo soup is one of my favorites.
My next brelinner will probably be Thai green curry with chicken and green beans. If I get around to it.

The weather here has cooled down quite a bit the past couple days, so I have pulled out the crockpot and tonight is chicken stew/soup, with potatoes, carrots, celery and cabbage - so far. I may do some biscuits to go with it. I love soup weather!!!
Sunday my son marinated chicken, steaks, pork chops and made baked potatoes and corn. Needless to say no one has to cook for awhile.
I've been thinking of an alternative way to cook some tilapia. I want to try it in the crockpot. I'm thinking to put a layer of mixed veggies on the bottom, then layer the tilapia on top of that and then *just* cover with water add a bit of garlic, salt, pepper and a touch of lemon juice.
That should work--sounds really good!
Depending on the vegetables you use, you might not need that much water. Non-starchy vegetables, like peppers and onions, will give off moisture. Unless you plan to reduce the cooking liquid to a sauce/gravy, you may be diluting too much of the flavor with water "to cover".

Tonight I'm making American Goulash, one of my favorite comfort foods. It's great for leftover lunches too!

The tilapia in the cp turned out really well! It is probably now my favorite way to cook this. LOL.
Not sure about tonight's dinner yet. Maybe some Korean bulgolgi over rice with some of the kimchi we still have in the fridge.
Cedar-planked scallops tonight. We'll see if Aldi frozen scallops are anything to write home about. No idea what the side will be. Time to raid the freezer or cook some fresh zucchini which ought to be used up (though we've been eating lots of zucchini lately).

Tonight: pork chops with faux refried beans (eggplant instead of beans; amazingly passable imitation) and leftover steamed zucchini.
Steve, how do you make refried beans out of eggplant? That sounds intriguing.

That's what I thought when I saw the recipe:
HEALTHIFIED” RE-FRIED “BEANS” from mariamindbodyhealth.com
1 eggplant (about 4 cups, peeled and cubed) or zucchini
4 slices bacon
1 c chopped yellow onion <== I used about 1/2-2/3 c onion; a full cup seemed like too much
1 T minced garlic
1 T minced seeded jalapeño
1 T chili powder
1 t ground cumin
1/2 t sea salt
Pinch cayenne
1/2 t oregano
liquid smoke (to taste)
1/2 c grated queso blanco or cheddar cheese (optional)
1/4 c minced fresh cilantro, garnish (optional)
Peel and cube the eggplant. Place cubes and 4 slices of uncooked bacon pieces in a pan [don't use really lean bacon; you need some fat to render out of it]. Stir fry until bacon is fried and eggplant is very very soft (about 10 minutes). Reserve bacon fat. Vegetarian Option: Peel and slice the eggplant, place in tinfoil and smoke in a wood smoker for 2 hours. This gives the eggplant a natural bacon flavor.
Place the eggplant (and bacon) in a food processor and puree until smooth. In a large, heavy skillet, heat the bacon fat over medium-high heat. Add the onions and cook, stirring, until soft, about 3 minutes. Add the garlic, jalapeño, chili powder, cumin, salt, and cayenne, and cook, stirring, until fragrant, 45 seconds to 1 minute. Add the eggplant puree and any cooking liquid from the pot, and the oregano, and stir to combine. Cook, stirring with a heavy wooden spoon, until the mixture forms a thick paste, 5 to 10 minutes, adding water 1 tablespoon at a time to keep from getting dry. [I stirred in a few drops of liquid smoke at this point to enhance the flavor.] Sprinkle with the cheese and cilantro, and serve. Makes 8 servings.

Traditional Re-fried Beans = 183 calories, 6.6g fat, 7g protein, 24g carbs, 6g fiber (18 effective carbs)
“Healthified” Re-fried “Beans” = 93 calories, 5.6g fat, 5.7g protein, 5.8g carbs, 2.6g fiber (3.2 effective carbs)
DW came home just as the dish was finished cooking. I gave her a spoonful to try without telling her what it was. "Beans?" she guessed. It passed the test for me, too. This will be in my rotation when I can find good eggplant.
My son cooked and invited his brother and his wife. He made us marinated chicken and steak, baked potatoes, watermelon, brownies and ice cream. Our air was good so spent entire day outside.

Have a lot of leftovers in the fridge so may be making Everything Soup in the cp for tonight.
I did not end up cedar-planking them. Something about not soaking the plank early enough... :|( So I broiled them, dotted with a little butter and lemon pepper.
They were good! I grew up eating scallops which were harvested earlier that day and these are not those -- they don't have the sweetness that ultrafresh scallops have. But they had an appropriate flavor and a good texture. I would buy them again.
I would recommend patting them dry before you cook them, however, so they brown more than steam.

SO and I got out today for a 1/2 mile very slow stroll through a park, followed by drive through hamburgers.
My heart rate was 110 after the stroll, so I’m doing better than before. Pulse ox stayed in healthy ranges. Now I’m tired - but it’s one small victory!
