15 bean soup with kale and ham..... had for lunch...
I have some chicken breasts, black beans, Rotel and corn in the slow cooker. Will shred the chicken, stir in some shredded cheese and serve with tortillas for supper this evening.
I'm tired this time of day from the time change so I just ate a hunk of Swiss cheese.
I need to go grocery shopping today, so I'm not sure what will be for dinner. There are plenty for leftovers, so no one will starve. lol.
Will be making hamburgers and Mac and cheese.
Probably pick up something from the deli when I stop at the grocery store on my way home.
We went for a drive to cheer ourselves up and it is beautiful today, so we stopped at a drive in and got a fish basket and onion rings and milk shakes and drove across the street and sat and looked at the lake and had a picnic.

Tonight's just gonna be three cheese tortellini with homemade red sauce. After the stress of last night plus having to get up for a 7 am training call this morning* I just don't have the energy to do anything more fancy.

DH made a fantastic pan-fried chicken thigh dinner from leftovers from the weekend deboning class. It was accompanied by roasted diced potatoes and wilted baby spinach.
Tonight with be tilapia with veggies and maybe some wheat berries.
Lunch is takeout from outback because it’s my DIL’s birthday. It’s also going to be our last nice day before winter. It will be 73.
Last night we had grilled cheese sandwiches and tomato soup. The bread was Sara Lee Artisan ( the closest my husband will eat...) Assiago cheese slices and munster. It was yummy.
Too many little plastic bags of chicken backs and necks and other parts in the freezer -- time to make chicken soup! Gotta scrounge around the fridge to see what else will go into this batch.
Italian sausage with veggies and rice.
Marinated and grilled pork tenderloin, roasted spiralized vegetables and a kale/cabbage salad.
For lunch is the leak and potato soup talked about earlier. That plus greens from the garden. It’s pretty heavy on garden produced food.
Dinner is bratwurst from the local Hermann wurst House, rice, and fried green tomatoes. Green tomatoes from the garden of course
We're getting a pizza to celebrate the defeat of Donald Trump.

A bunch of Trader Joe's appetizers and some Trader Joe's sparkling wine, because you know, its a warm Saturday evening.
Tuna salad on a bed of lettuce and sunflower seeds.
Just made a quick chicken and wheat berry soup with diced carrots. Not too bad for a please fall evening.
Lentils. Cooked up with garlic from the garden and an onion from the grocery store. Simmering now, ought to be ready in 45 minutes.
Made adult chicken tenders...marinated in sherry and dijon mustard herbs- rolled in breadcrumbs, drizzled with olive oil, baked at 400 for 15 minutes, done and very tasty. A new recipe (actually a very old recipe cut out of the paper and never tried...)
Roth Surchoix Grand Cru alpine-style cheese from Monroe WI, paired with pinot noir wine. The cheese won a world championship. The closer it is to the rind, the more this cheese reminds me of President-elect Joe Biden. It is a rare winner. It calls for good teeth, and it is rather dry. A sip of wine, and we are ready for more.
Tonight it is stuffed peppers made with peppers from our garden stuffed with hamburger grown on non-factory farm in central Iowa, onions our garden. The tomato sauce covering it is tomatoes from our garden.
Also a little pasta and butternut squash.
Eggplant baked with canned tomatoes and unsweetened shredded coconut, my creation.
Pork carnitas here last night. Leftover chicken soup tonight. Leftover carnitas tomorrow night...

Radishes microwaved with the juice from a can of whole tomatoes and nutritional yeast flakes. Boy am I getting tired of keto. I may get some hash browns tomorrow. When it's cold I love my comfort foods.
Hot dogs!!! Haven't had any in months! LOL.

I broke down and bought some carbs. Tonight dinner is a crusty Parisian baguette with butter. Next week I will try to get back on track. Cutting down on caffeine has left me craving a carb rush.
