Tonight, either a tri-tip steak or a pan-roasted chicken with lemon. Depends on how ambitious I feel. Either green salad or brussels sprouts for a side.
Baked tofu cubes and roasted vegetables over rice with peanut sauce. It's on my favorites list to do routinely but requires some extra prep time.

I’ve been well enough to do some things at home - so about 3-4 times a week I make something in the kitchen. (Husband does all the grocery shopping for me. It’s awesome.) I’m enjoying getting back into the simple healthy habits I had in the 80s. Being at home accommodates this. Bright side of my situation.

We had a stressful day so went back to the drive-in for another fish basket. I think fish and chips is kind of the high point of fast food.
If you mean the bean-and-corn salad recipe you posted, at 23 net grams of carbs per serving, it would be okay as-is for someone doing One Meal A Day/intermittent fasting.
But one could make some substitutions. Black soybeans (canned) would be a fine substitute for the black beans and would take several grams of carbs out of it. Pull back on the corn a little and, yeah, it would fit for most people.

Homemade chicken noodle soup
Dinner tonight will be Thai. We were booked to go to a B&B in rural Minnesota, and figured early on that we'd be OK for a couple of nights in our own room and with breakfasts dropped off outside the room. But with a four hour trip to get there (pit stops) and not a lot to do but drive around (we didn't want to be poking around inside cramped gift shops and county historical museums -- if they're open) and the flareup in COVID-19 cases, particularly in outstate MN, we just thought better of the whole thing. We're staying home.
So we'll honor the desire for a change in scenery by taking a short drive and then picking up takeout dinner. Staycation it is.

My favourite for dinner is noodles. It's so easy to make and so tasty. I have a great julienne vegetable peeler so I julienne zucchini and carrot easily with that. I love sometimes to difersfiy and add some more veggies like corn, mushrooms etc.

Pulled need-to-be-used veggies from the fridge and some pantry items and now have cheese-y butternut squash and seasoned mashed cauliflower *soup*, and a chickpea, swiss chard, spinach, and roasted red pepper soup on the stove. Choices!
Butternut squash is baking now and will be served with butter.
We took a trip to Lowe's this afternoon and stopped at our favorite fish market, which is across the street, so we're having fresh salmon in a honey balsamic reduction sauce, fingerling potatoes and broccoli florets.

Macaroni salad that is 50% veggies. All sliced finely. (My back hurts now but my time in the kitchen is now about 45 minutes before I have to lie down. Progress!)

Pork loin was BOGO Wednesday. Hubster smoked 18# today. OMG it is fabulous and we've got lots for the freezer and future meals.
I defrosted 2 bags of green beans I stocked up in early April when the world cried food would vanish. I mixed in a can of Cr of Mushroom soup, 2/3c milk, a few tsp of soy sauce and 2 big handfuls of grated cheddar. I melted 3T butter and mixed in 1/2c panko crumbs and sprinkled over the top. Baked 350 30 minutes and then broil for 4m.
Hubster makes the best Bourbon BBQ sauce.

DW and I decided we're going to get takeout once a week from a local indy restaurant to help them get through our second lockdown. Tonight's dinner was from a soul-food-inspired restaurant that opened a couple of months ago. Very nice people but, boy, they didn't have their act together on the order. The food was tasty, though. DW had chicken wings and a peach cobbler dessert; I had collard greens and a chicken/brie/spinach sandwich minus the bread (I explained I was eating keto so would they leave off the bread? They did. Then they filled the rest of the container with tater tots *sigh*). Good thing DW likes tater tots...

I am going to going to have stuffing by itself someday soon. My mom gave me some she mixed up to bake since we will not be together on Thanksgiving. Yesterday was her birthday and we got together on her patio. Temps were in the thirties and they put a small space heater out but it didn't do much. This is going to be a hard winter and I'm not talking the weather.
I have been so miserable all weekend. I think I have an abscess and will need a root canal. It is especially frustrating because I tried to be proactive and went to the dentist twice, but everything looked OK and nothing showed on x-ray. I could feel that something wasn't right, but couldn't even tell exactly what tooth it was coming from. He did the tapping test Fri, and that must have really awakened something, because I woke up with so much pain on Sat morning (at least now I know exactly which tooth is the problem). So I am living on grits, scrambled eggs, cottage cheese, cream of rice and smoothies ( with a generous helping of Tylenol, Motrin and Orajel). I will be calling my dentist first thing when they open.
