We had baked potato bar. Discovered our Instant Pot is THE best way to "bake" potatoes, at least time-wise.
Last night was corn meal mush with tomato sauce and nutritional yeast flakes and for tonight I plan leftover mush fried with garlic and tamari.
We are having filet mignon tonight. It was 20 for a pound but it will be dinner for 2 tonight and another meal for me. Much cheaper than eating it in a restaurant.
I roasted a large turkey breast a few days ago and it is not getting used up as I thought it would (sandwiches, etc.) so tonight I'm making a bowl consisting of turkey, roasted carrot and beet, farro, green beans and a cranberry chutney I'm cooking up this morning.
