Quinoa, black beans, mushrooms, spinach all topped with chopped fresh tomato.

Pan fried salmon, potatoe, pepper,squash
Shrimp scampi made with edimame fake pasta. (SO was recently diagnosed pre diabetic so we’re exploring low carb alternatives for pasta.)
The edamame pasta was actually pretty good. Dryer than real pasta but good texture and taste. Tomorrow we’ll make theleftover with red sauce.
Whole chicken, cooked with lemon juice, olive oil, garlic, salt and pepper. On a bed of cut up small potatoes, carrots of all colors, and celery root (have not tried celery root before, I like it this way). And I am making broth from the chicken carcass (including the top of celery root). Do I always make broth (uh in the once every 2 or 3 months or something we have a whole chicken), definitely not, but a bit ambitious today.

Venison burgers, fried in the skillet. They were yummy..just patted them out and sprinkled worcestershire sauce, salt and pepper on one side. thanks to my brother in law we should be getting more!!
