DH and I have a new favorite once-a-week meal. It started with a box of Costco's Lentil Madras packets. We tried a packet and liked it. We made basmati rice to go with it. The next week we decided to sauté Bella mushrooms and then add the lentil packet to it. it was great. The next week we decided to add a can of diced tomatoes to the lentil packet and mushrooms with rice. It was fantastic.
Last night we cooked chunks of hot Italian sausage and added that to the lentils, mushrooms, and diced tomatoes and had it with the rice. We have pretty much perfected the recipe at this point. It's easy, fast, tasty and pretty healthy (high sodium in the lentil packet, but we use one packet for the two of us and we usually have a serving or so left over). And you can tailor it in so many ways.
