Finally dealt with two huge zucchini from a friend yesterday. Have some of it along with beans, tomatoes, green peppers, carrots, celery, etc. all in the crockpot for a big batch of veggie soup.

So far this week...
Sunday- Homemade chicken nuggets with rice
Monday- Tamale Pie
Tuesday- Spaghetti
Wednesday- Homemade waffles, eggs, and bacon
Tonight- Nachos
Possibly a tradition carry over from younger days, but I try to put a little extra effort into dinner on Sundays and it's easier to cook now that it's not so hot.
So, "Baingan Bharta". An experiment using roasted eggplant and garden tomatoes. Traditional Indian.
Finally cooked the zucchini patties, so that is dinner for tonight.
Trying to use up some of the frozen veggies that have been around a while. Broccoli cheese soup, salad with garden tomatoes and cukes, and cornbread muffins.
Haven't had it in a while, so brown rice and lentil bake will be tonight.
Fall weather is definitely here! Putting a bean soup in the cp - it's a sweeter version of a not-quite-chili. Maybe some cornbread to go with it, if I have the ingredients.
Nice fall day was topped off with a crockpot chicken stew and homemade biscuits. Yum!!!

Ground beef crumbles with lots of chopped garlic, a few scallions, sambal oelek, a little tomato sauce, and plenty of salt. Also, Two soft boiled eggs with butter.
