Tonight is going to be grilled chipotle chicken skewers. They came pre-chopotle'd and pre-skewered so all I have to do is start the grill and put them on. They were on sale cheaper than plain chicken breasts so it seemed like a great quick and easy weeknight dinner. Will probably make a box of stovetop stuffing to go with them.

Last night was dinner out to celebrate dh's birthday. Went to a Lebanese restaurant. A bit pricey, but sooooo much food that we all had leftovers that will feed each of us at least 2 or 3 more meals.
Today, of course, is Easter dinner at a siblings house. My contribution is roasted asparagus, steamed broccoli, roasted cabbage, Korean Smokey Eggs, and baby carrots & hummus.

Okay---I like Beans, about like you kids like chickin'. Ha. So, yeah---I reckon today, it will be Beans, smothered in barbeque sauce and grilled onions. Yup.

Last night we stopped at a Jimmy John's and got a Caprese sub and a roast beef. 1st time for us. They were quite decent, the bread was good.

Cheese salad sandwich on rye. Picked up the concept from some English program. Needs some perfecting, but has promise. Maybe with tomato soup.
My number just came up on the Rancho Gordo Bean Club wait list after several months. Six different dried heirloom bean varieties with spaced deliveries through the year.

Tonight we had chicken broth DH had made heavily infused with ginger, and I happened to have a package of Japanese soba noodles and dried shiitake mushrooms and ramp bulbs, so we put it all together, added fresh carrots and frozen peas, and voila! It's actually pretty delicious.

I had pan fried thin boneless port chops in plenty of olive with a lot of garlic. Seasoned with fresh ground black pepper and kosher salt. Delicious! Poured the extra olive oil/garlic onto the chops when they were done as a sauce. That really made it.

Pizza.
A few weeks ago SO was going to make pizza but also decided to make brownies for dessert. While the pizza dough (frozen from Whole Foods) was rising in the oven with the light on for a little warmth he turned on the oven and proceeded to 1) cook the dough, and 2) melt the saran wrap on top of the bowl. Tonight he has also decided we need brownies for dessert and as he was mixing the ingredients for them he said "do you smell something burning? It smells like plastic..." I didn't smell anything but remembering the previous episode I turned to him and said "really???" At that point he admitted that he was joking and I noticed the pizza dough bowl sitting safely on the counter. He was hoping to get a freakout reaction from me and was slightly disappointed that I remained calm. :D
I'm reminded of the time when we were first dating and he'd mentioned that he wanted to one day walk over the Brooklyn Bridge. (I'd lived in NYC for 10 years by that time and he was a new arrival, having just moved to central NJ. I'd ridden my bike over that bridge dozens (possibly hundreds?) of times so I was well acquainted with how awesome it is and also how to access it.) One Sunday afternoon while we were out and about doing random things I took him on the subway to Brooklyn and we exited the station directly onto the footpath and started walking towards Manhattan on the bridge. After a few minutes he said "I never knew Brooklyn had such a great skyline." I said "turn around" so he turned around to look at the Brooklyn skyline and asked "what's that?" And I said "that's the Brooklyn skyline." Once he realized that he'd mistaken the Manhattan skyline for the Brooklyn skyline he laughed and laughed and laughed. And thought it so funny that he proudly told everyone over the next week about his mistake, including calling his mom as soon as we got back to my apartment to tell her what he'd done. I realized at that point that he was a good man. Anyone who can laugh at their own mistakes like that is a keeper. Twenty years later I'm still not disappointed with my decision.
