Thanks. It's ... not quite what I'd hoped for. It's tasty; just not what I had in mind. I'll figure out how to change it for next time. :)

Chicken sandwich and a pear and a clementine
Quinoa with salsa and guacamole; clementines.
Made the first mac and cheese in a long time and it was so good. Added green peas and a side of pickled beets.
Well this wasn't the plan, but birthday cake with Mom. It was an Italian rum cake from Market Basket, and it was surprisingly good!
We had best split pea soup ever. We had brought the peas in a bin full of food and the moving trailer showed up yesterday and so we cooked the peas with celery, onion, carrot, and cream.
It was amazing.
We had pulled pork! It cooked all day, then my husband pulled it- he's a fanatic about getting the fat out, so the pork is lean and lovely. Put NC mustard/vinegar on it and serve on those beautiful buns I had made. Feeling very "chef" like. Plus 3 quart freezer bags of the pulled pork for the freezer.
Tybee, I think I'll try the cream in the pea soup. I've made a couple batches this winter and both turned out well, but I imagine cream can only improve it!
Going to saute some turnip and acorn squash and then add diced tomatoes, serve over rice.
Chicken thighs some way TBD, brown rice, green beans.
Having had a serving of mac and cheese with carrot sticks and apple for lunch, it will back to pea soup and salad for supper with clementines
Shrimp & grits, salad.
We had what is a long-standing favorite recipe in our house, tweaked over the years. It's chicken thighs, cooked with sweet potatoes, mango, and curry seasonings, all cooked together in one pan.
Jalapeno poppers and a salad, maybe.
Splurge meal! Went to local fish market and picked up lobster meat, steamer clams and some stuffed clams. Delightful!
DH got a pasta attachment for our KitchenAid so for the very first time we had fresh pasta made at home. I'm not even Italian, but I definitely saw a difference between fresh and boxed!
Tonight is going to be chicken andouille sausage stir fry to use up all the leftover ingredients from the air fry spring rolls the other night.
Had wonderful homemade kabobs with chicken for lunch.
Butternut squash baked with olive oil and quinoa with tomato sauce, both with nutritional yeast flakes sprinkled on top. I love them.
Crack slaw and citrus salad
Ham and steamed cauliflower. I'll go for something fancier tomorrow.
A mix of triple zero cherry yogurt, steel cut oats, coconut flakes, raisins, olive oil and lemon juice.
Fried eggs, sausage, bacon, and sourdough toast.
DH is making pork tenderloin medallions with butternut squash puree and roasted red potatoes.
The "something fancier" was a tri-tip steak I bought by chance at an Asian supermarket. Tough?? DW wouldn't even try it. I soldiered through a piece though I think it would have been less work overall to open a can of tuna or something. I will turn the rest of the steak into thinly-sliced beef for pho or somesuch. Maybe roast chicken tonight....
Baked haddock :)
Red beans and rice with smoked kielbasa.
More eggplant bruschetta over quinoa and a frozen peanut butter bar.
This is the crack slaw recipe we use:

Tonight is a veggie bowl - farro, sweet potato and black bean with other chopped veggies and an avocado sauce
Chicken-broccoli stir-fry, brown rice.
Thanks for posting... will have to try this out!
Main meal is lunch at this house... today was mushroom stew and homemade bread.

Tomorrow I am making a loaf of bread. Last spring I made bread so often and loved it so gained 'covid bulge'. I have been holding off making a loaf but frugal-one is inspiring me as I have some fresh mushrooms.
Last night I had a free BK chicken sandwich: free because DH was picking one up for me at the drive-thru and when he went to pay, the staff member at the take-out window told him the car in front of him had paid for it for him. Random act of kindness at Burger King!
Dinner with the grandkids last night -- spaghetti with red sauce (Creamette spaghetti for them, edamame pasta for us) and sliced cucumbers and radishes.
The chicken I planned to make turned out to be chicken wings (not leg quarters; apparently still somewhere in the freezer), so I oven-fried the wings (toss them in baking powder and salt before cooking) and made a butter/garlic/Parmesan sauce for them along with asparagus DW picked up at the big-save store.
