Super burrito
Burrito filled with finely diced carrots, onion, mushrooms plus chicken and an Asian pear.
Cottage cheese while beets roast. I will probably have them with sour cream.
Mushroom burgers, not vegetarian.

Pumpkin soup and an English muffin with raisins and cheddar cheese.
Nothing. We had free bagels at work and I slathered on lots of cream cheese so I would have some fat to counteract the carbs. I guess it worked. I had a handful of raisins in the afternoon and I am not hungry.
I found some beef shanks in the freezer. A meal or two and nothing like what we've been eating. I scrounged a Web recipe that required only what I had in the house. It took a full hour longer to cook than the recipe suggested and, in the process, the braising liquid started burning. *sigh* We'll eat it but I've already deleted the recipe. Next time, different recipe and a pressure cooker. That's the tool for this job.

A piece of salmon from the freezer and some rice with butter. Also an orange.
Spaghetti squash with diced tomatoes and fresh, homemade sourdough bread.
My kids are buying, but DH is cooking, our haddock dinner for our 44th anniversary celebration!

I tried a Sesame Honey Chicken Instapot Recipe. FANTASTIC! I added steamed broccoli and served it over basmati rice.
Pulled pork on a pretzel bun (we have several quarts of pulled pork in the freezer).
Pasta w/Ratatouille from the freezer and some crumbled Italian sausage/ground turkey mixed in. Fresh Parm grated over the top.
Taco Salad on fresh spinach instead of lettuce mix.
It's been a tasty week here.
Soup(e) au pistou, too much work just for me, but there you go.

DH made a pile of fried chicken cutlets. He always did a great job on these, but in recent months, he's been adding some curry to the breadcrumb seasonings and that elevates them to something truly amazing!
My Polish DIL makes the best breaded chicken fried cutlets. Then she makes little balls instead of potatoes and we smothered it all with gravy.

Thank you, happystuff, and all the well-wishers! We had a great Zoom visit with all 4 kids and all 4 grandkids, and then we had DH's delicious dinner. He also gave me a set of snowshoes--Steve, you mentioned switching from cross-country skis to snowshoes... well, I hadn't decided if I should try the skis I got for Christmas because I was worried I wouldn't like them. Last weekend, DD and I went snowshoeing on a trail for the first time with borrowed snowshoes and I LOVED the snowshoes. For a timid athlete like me, they were much better than skis. Snowshoes protect you from falling, and skis come with a pretty high risk of falling, and I truly don't want to twist an ankle at my age.
So I'm returning the cross-country skis (thank you, 90-day return policy!) and embracing the snowshoes which I think will encourage me to engage in more outdoor winter activity.
I like to snowshoe.

Cross-country skiing--as it was described to me--sounded like a death march. The snowshoes are undoubtedly better.
Omg my worst date ever involved cross country skiing. I vowed never again, although I bought some really cool Norwegian wooden ones for house decor.
Last night was my first time ever trying (and making) tamales. I took most the fresh stuff in my fridge - celery, tomatoes, parsley, garlic, onions, cheddar cheese - and sauteed it, then put it in the dough and steamed it inside parchment paper as I did not have corn husks. It turned out pretty good.
Chili and tamales, and a salad.
Wieners and beans with a salad and an apple. Made a loaf of homemade ww bread that is really good.
Tonight is homemade broccoli/cauliflower/potato cream soup with a slice of ww homemade bread sprinkled with parmesan plus a mango for dessert.

Ground beef patties, bacon and salad. Maybe today, maybe tomorrow.
I'm psyched--DH is trying to eat healthier, so he asked tif we could have a lentil dish tonight. He NEVER ONCE has asked for lentils for dinner. So we're having lentil curry with yogurt sauce.
