Scallops on pasta with pesto sauce; spinach salad
I bought Dominos pizza on their 2 for 1 special. I will put the extra slices in the freezer to enjoy as an occasional treat over the next month with a salad and a fruit
Freezer food: 2 packages ratatouille, 1 package sauted chard, 1 package sauted kale, 8 ounce Italian meat (I cook up ground turkey/Italian sausage a few pounds at a time and freeze).
Stewed that for an hour. Cooked up 1 # of penne and mixed in. Layered with 1# cottage cheese, 8 ounce Mozz and baked for 30 minutes. Meals for days. YUM!
Made leeks and rice (prasorizo), may have it with some leftover chicken or just by itself. Yesterday got delivery of a salmon kabob plate. The day before had a piece of salmon from the freezer with a baked potato and sour cream.
Tacos!
More tacos as there were enough leftovers.
Snow peas sauteed with vegetable sauce and shredded cheese.
Pesto pasta with chicken sausage and green beans. All but the pasta was in the freezer 5h ago.
Seems the weather can't decide if it is going to clear up or be damp and wet, so I'm thinking a cp of chicken and rice soup will be nice should the damp and wet prevail. LOL.
Barbequed chicken! We dragged the grill off the snow onto the cleared driveway and my husband grilled chicken! Enough for 3 days of meals!!! Yay sunshine!!!

We went to Costco and stocked up on fresh veggies! YIPPEE!!!! It's been 24 days:~)
Made chicken soft tacos... super simple and good!
1-1 1/2 pounds, frozen, boneless chicken breasts
14 1/2 oz can diced tomatoes with green chilis (used Rotel)
1 envelope taco seasoning (made my own)
Mix all in crockpot. Cover, cook on low 6-8 hours. (I put on high for 1 hour and then turned to low because I did not have that much time.)
Shred and serve in soft tortillas. Top with salsa, cheddar cheese or whatever. (I topped with raw veggies/lettuce and taco sauce). Very tasty.
King Arthur cheesy pan pizza, modified by me to use half the dough for the crust as called for. Added pepperoni on my half, and onions and peppers on hubby's half.

If i feel ambitious (hah!), possibly spaghetti with meat sauce cooked in the Instant Pot. I love that the IP method doesn't require waiting while gallons of water come to a boil.
Had no idea what to make for dinner so came in here for suggestions. I was actually going to make a bulk batch of meatballs, so I'm thinking like Jane - pasta and meatballs. Thanks!

Meatless Cajun style red beans and rice. I make up a large batch and freeze into one meal portions
Yesterday we went to a little gem of a seafood market the next town over that had somehow fallen off my radar. For some reason I didn't think they were there anymore, and never have I been happier to be wrong. Anyhow, no kid in a candy store could be happier than Rosa in the Pine River Fish Market, and DH was pretty enthusiastic too! So last night was a large salad with fresh lobster meat, and tonight was crabmeat rolls and tomorrow night will be pasta with clams. We spent less than $50., so it was a relative bargain for such fine dining.
Homemade mac n cheese. Oatmeal raisin cookies are cooling on the counter--except for what I ate hot with a glass of milk.:~)

We bought lots of fresh produce Saturday. Super excited to have fresh Taco Salad for dinner. (Ground beef/turkey mix is in the freezer).

I label any cans of food when I bring it in. It occurred to me that I hadn't eaten sardines for a while so had sardine sandwich and salad and an orange. Need to do that a few more time this month and use up older stock.
Potato salad, tossed salad, vanilla pudding. I planned this week"s groceries around the assumption I might not have a microwave.
Leftovers!
The spaghetti with meat sauce was delayed, then morphed into a vaguely Asian-inspired noodle dish with beef, leeks, peppers, onions, garlic, ginger, scallions, sesame oil, and a dash of soy sauce. It's in the Instant Pot.

OK, that's not exactly dinner. I'm pretty sure my next dinner will be eggs, breakfast sausage, and corned beef hash.
Mac and cheese.
Frozen burrito with sour cream and salsa. I usually buy Amy's Organics or Costco but I'm trying a new brand: Red's.
Lasagna, salad, cheese bread and sugar-free homemade chocolate ice cream...
Change of plans: Eggroll in a Bowl. Cooked ground beef/turkey from the freezer as well as chopped onions. (I love having chopped onion in the freezer!!!)
