Got the turkey carcass from Thanksgiving and finally have it simmering on the stove. So dinner will be something with the broth and pickings. It's cold, so I'm thinking soup! LOL

Turkey soup, turkey over noodles, turkey sandwiches. Turkey turkey turkey. I let DH buy the turkey and he got an 18 lb one, too big for us.
Already planned and mostly bought our Christmas meal. Rolled boneless turkey roast, TJ's cranberry sauce, cheesy potatoes and a Village Pie Maker frozen pie in cranberry/apple. Freezer is full. All we will need is sour cream for the potatoes and ice cream for pie. Got the turkey and the pie on sale.
I was given the option of taking it and said "yes"!!! Just finished simmering it, straining it and picking it. Soooo much meat left on the carcass - at least two meals, if not more! And at least two quarts of broth (gave some to child, who made a surprise visit. LOL)
However, I also had two bags of sweet potatoes that needed to be dealt with, so I baked them, mashed them, added ground turkey, broccoli, and shredded swiss cheese. Sort of a twice baked potato except that the skins were unsalvagable. Put the miss into pie pans and will bake one for dinner. (three others in the freezer)
Made turkey pot pie this afternoon. Could have used a bit more salt, but the crust turned out!
okay-----noodles of some kind, boiled, and topped with cold sketty sauce of some kind. shredded lettuce, with ready-made fried onions and itaian-style dressing. The cheapest brand, too. Pepper on all of it. Yup
