I am trying to make some simple chicken noodle soup, enough to last a few days. I have been craving this soup, looked at the price:idea: of the Campbells tinned soup, and decided to buy some chicken and make my own.

We are tired after all this buying a house back and forth so will make a quick saute of protein (chicken this time), mushrooms, onions and garlic. And salad.
Homemade onion soup using up leftovers.
Asian spicy peanut noodles using whole wheat pasta. Slightly less carbs than regular spaghetti to at least partially accommodate SO's pre-diabetes. Last time I made this I put an extra dollop of the spicy red chili sauce which both of us LOVED so I will be repeating that tonight.
Fridays we usually go out for dinner but because of omicron and his higher risk due to diabetes and being a cancer survivor we decided to stop doing indoor dining until the numbers here go down and neither of us really feels like sitting outside to eat when it's in the low 50's/high 40's.
I will be putting some chicken legs in the cp in a little bit. Will steam some broccoli and haven't decided which grain to make with it yet.
Homemade chicken pot pie
Trying to use up the last of my oatmeal. The microwave died so I cooked it on the stove and then out it in the oven with some cheese on top to bake. It isn't very good but I don't want it to go to waste.
Soup. Chicken stock base with whatever else I can find to throw in it. Basic "everything soup".
A slice of pizza, large salad and an apple.
Coconut shrimp.
I had planned on shrimp hot and sour soup and a salad but without any chicken broth on hand the soup was a no go so I had to redirect the thawed shrimp to something else, so shrimp scampi. Maybe I'll go to safeway and do the soup tomorrow.

More using up what's on hand - tomatoes, chives, olives, shredded cheese and chopped walnuts with lemon juice and olive oil.
SO really wanted the shrimp hot and sour soup yesterday so I thawed more shrimp and went to safeway and got chicken broth today. Because it's Chinese new year he had hot and sour soup for lunch today at work since the staff at the hotel is heavily weighted towards Asian folks. (At thanksgiving the hotel gives all employees either a ginormous (25 lb I think?) bag of rice or a turkey. They give out way more bags of rice than turkeys.) I offered to make something different but he still wanted the soup. So shrimp hot and sour soup it is!
spaghetti with meat balls, Texas Toast (I'll garlic it up), salad. I have an open bottle of wine in the fridge, so that may be on the menu too. I'll have to shovel when I get home, so hot carbs sounds good.
Baking some onions and I will probably put nutritional yeast flakes on them.
Since DH is suddenly interested in Indian food and we don't have Indian restaurants up here, I bought two different prepared Indian foods from a local market in Burlington. I figured we could share both and then if DH likes them, we can research recipes so we can make them ourselves.
Homemade tomato soup, grilled cheese sandwich and an apple. Had wonderful leftover beef stew for lunch. It is so nice when the meal turns out so well, one enjoys one's own cooking.
