Our household is now a couple weeks into DH’s new Alpha-gal diet.
some findings:
* Indeed, most all fake cheeses are nasty things. The tofu sour cream isn’t awful, it’s just its own thing. It doesn’t taste like sour cream.
* I now read labels assiduously and I’m surprised at how many commercial bread products contain milk. I would say 80% contain milk.
* DH is losing weight too fast, I don’t like it.
* all commercial baked goods use milk.tomorrow I’ll have a big baking day where I can make several baked desserts and freeze them. Brownies, muffins, lemon cake are on the agenda. Any recipes that call for milk will not be a problem because I can use soy milk.
* so last week DH met Swiss relatives in the city of St. Louis and they went out to restaurants. The first restaurant was fine, he had grilled chicken breast. The next morning he ate at a restaurant and explained about Alpha gal. The waiter assured him he knew about Alpha gal and what they served to him would be fine. DH ordered scrambled eggs and toast. On the way home, he felt ill, his throat was closing up, so he went to the hospital.
No bueno. we think the eggs had milk in them. or I suppose it’s possible the eggs were cooked on top of a griddle that also cooked pork sausage or beef patties.
* Before DH’s diagnosis he felt sick and was dropping weight so I told him to go downtown to the ice cream shop and eat full fat ice cream. He did that for a few days in a row. Eek! That was not a good idea since it was just keeping him sick.
